I do not own a microwave, can I just pop this into regular or toaster oven and have it work? I could also use a oven safe one.

Yes, I originally tested this as an oven mug cake! You can see how I cook it in the oven at the end of this video. The oven mug cake takes 35 minutes at 350ºF to cook all the way through the center, so making a batch of banana muffins would be faster in that case. This is my go-to recipe for banana muffins: detoxinista.com/healthy-banana-muffins/ (I think the metal muffin pan speeds things up, so perhaps a metal coffee mug would make the mug cake cook a little faster?)

Could I use a flax egg or maybe applesauce?

Perhaps! I find that applesauce makes a better egg substitute when using all-purpose flour, so if you don't need a gluten-free recipe that will give you better binding. But let me know if you experiment with either of these!
