DOUGH
1/4 cup (60 grams) warm milk
1 1/3 cup (315 grams) warm water
1 tablespoon (12 grams) instant yeast
1.5 tablespoons (22 grams) sugar
1 large egg (50 grams)
2 teaspoons (12 grams) salt
4 1/4 cups (530 grams) all-purpose flour
1/4 cup (55 grams) softened butter
EGG WASH
1 egg
1 tablespoon water
(Optional) sesame seeds
Bake the buns in a preheated oven at 425F for 15 minutes or until the tops are golden brown.

I’m having the same issue. Stand mixer, 12 mins so far and it’s still a mess. I even weighed all ingredients. I’m currently letting it rest for 5 mins then I’ll see if it looks any better
