One thing I love about this channel (and Spanish cuisine obviously!) is that so many of the recipes use the same simple ingredients to create a variety of delicious meals. I’ve been able to make so many dishes with just onions, garlic, tomatoes, potatoes, and chick peas! Really gives this channel the authenticity because that’s how families actually cook at home!

The one thing I am not keen on is ‘a kiss of’ pepper or salt. Otherwise fantastic recipes. Takes me on my holidays every time I watch

I lived in Spain for a couple of years, and being on a budget, working split shifts and a plant based eater, means jars of legumes figured into most of my meals, and I missed their creamy texture. One can find them Stateside, but they are expensive and most places don't recycle glass jars whereas food tins are. In Spain I had no electric appliances, so potato masher was everything. I still use one for many dishes to leave more texture or save cleaning. Here are my tips after many experiments at recreating jarred garbanzos, which are softer than tinned or home cooked, so turn out creamy mashed by hand, If using the others, the skins usually don't break up completely, more of a tuna salad texture, which is nice and hearty piled in a sandwich or wrap, but make sure mix isn't so loose that the sauce leaks out, so start mashing as you add broth bit by bit just until it holds together, I actually save the beans liquid and use that instead of broth as it thickens and binds the mixture. I'm from Tejas, and that's how I was taught to make refritos lol. Whatever device used to purée, freezing tinned/home cooked in their liquid then thawing them will break down the skins and are as creamy as the jarred. Put beans in plastic/pyrex and freeze in the morning, and they'll be hard frozen by evening; thaw a couple minutes in microwave while prepping the veg, drain, rinse and proceed with recipe. Using dry beans in pressure cooker/ Instant pot and adding extra 5-10 minutes to your regular cooking time, keep warm during natural release works a treat to make soft creamy beans which I prefer in most recipes. My jarred beans were always cooked with bay leaves, so add some to pot of beans or when cooking the sauce. ¡Aproveché!😊

That's what I was thinking too! I would think that it's best eat it quickly like in 2 or 3 days! I wouldn't go longer than a week though!

Yeah I was thinking the same thing! I figured he would use a food processor but I think a potato masher would work just as well! I have a potato masher too and I think using a potato masher is easier and quicker! 👍

As an alternative don’t drain and wash the chickpeas. The aquafaba liquid makes for a creamier hummus.
