1:17 - This method for removing the skins is very fast, but removing them like this also washes out a lot of starch that makes the hummus creamier. I have had better results when I remove the skins one-by-one without putting them in water. Of course that takes a lot longer, but for the perfect hummus, in my opinion, that's the way to go if time doesn't matter.

Thanks for your comment! While removing skins one-by-one might seem to preserve more starch, the majority of it is inside the chickpea itself. Removing the skin by rubbing in water doesn't significantly affect the creaminess. For extra smooth hummus, try cooking chickpeas longer or adding more tahini and olive oil. Enjoy!
