Adding salt is a good technique for steak and tomatoes, as well.

Sadly parmesan cheese is not vegetarian TuT There is animal rennet in it. But it's great to look for vegetarian recipes for your wife 🐸🙏

@@Roxar96 it's not vegan, but it's lacto-vegetarian (you forgot butter as well). And if she doesn't like either, I bet they already have their substitutes If you liked this receive, check roasted cabbage slabs. It's really good too. I learnt from a Serious Eats recipe some time ago

I tried this and I was shocked by the result ! I admit that I was very sceptical but it was really good and what I love even more is how much I learned by doing this, even though it's a very simple recipe it's very clever and elegant. The garlic was so crispy with a delicate taste, I'm going to do this with many recipes. Thanks a lot from France !

I am an Italian American, many days my grandmother would make me fried zucchini as an after school snack. I think this recipe is an incredible elevation of a recipe i loved so very much as a child. Thank you!
Fixed this tonight. Didn't get as much water as I had hoped out. Was still super tasty.

Me too! The frying pan kept filling with water which I had to empty, so I lost some of the oil when i did that. I think I was using a zucchini that was way too large.
With so many zucchini coming from the garden, I have been looking for straight forward recipes to try with them. I will have to try this.

@@GeorgeLABO I followed your recipe and some of my family felt it was too salty, would you happen to know where I maybe have made a mistake. I rinsed the salt off but that didn't seem to be enough.

Absolutely delicious!!! Zucchini is one of my favorite vegetables, and the garlic and the parmigiano cheese and ALL!!! Yum Yum!!
Some patissieres that worked for Mr. Keller started a bakery here in Austin, Texas, called Bakery Lorraine. I hope you can come and try it sometime.

this is a great recipe , i made it the other day ! The only small change I made was that I substituted the zucchini for some rib eye steak - turned out fantastic !

Chef George, I made this Zucchini Steaks following your instructions and it was delicious! My hands were shaking, too : )~
Tried this not exactly left the cheese off. Was good- should have let it caramelized a little longer and cooked the garlic a little more golden. Will try it again. Did not take super long and the parchment paper was a good trick. helped keep the spatter down. Just make sure its not to big need that gap to let the moisture escape.
tsugoi. this looks amazing. seeing how caramelized it got makes me wonder about the fond it makes and how it could be used.
