Dang. I wish that I'd have seen this vid this morning before I Weber smoked (with maple wood) some chicken leg/thigh quarters. Mine were wet brined overnight, then dried well and seasoned with some Kosmo's rubs in the fridge for 3 hours. They turned out delicious. BUT, yesterday, we did a chili crisp (Fly by Jing) inspired beef stir fry. Never thought to translate that over to chicken.... Excellent my Friend. Oh yeah, flats all the way with wings.
