Tried it twice now, used evaporated milk as cream is heavy and does not agree with some stomachs in our house. This is now a family favourite! Thanks Marion.

This was hands down one of the best meals I’ve ever cooked. I used thigh instead of breast and it turned out beautifully. Definitely will be a regular in our house?

skin on/skin off won't make a difference to the overall dish, just make it according to the recipe. you'll still develop a fond without the skin. You can also add a touch of chicken stock cube/paste if you find that you're not developing enough fond before adding the cream if you'd like
whats the benefit of using chucken breast rather than thigh? if thigh is more juicy

Once seasoned most carbon steel pans can handle a little acidity. You'll take a tiny bit of the seasoning off but unless you are simmering sauce everyday you'll be fine.

It's not. I promise, if you stew tomatoes for much more than a few minutes you'll be surprised at how easily the seasoning wipes right off. Check out cook culture or Uncle Scott's kitchen under their cleaning carbon steel videos. They literally use tomatoes to strip the pan quickly. It will also flavor your food in a way that is undesirable.

Absolutely love your recipes but why is there constantly music playing on your videos? It's kinda distracting and I'm surprised it's always playing. Most cooking videos don't have the constant backdrop of music. But, other than that, love your videos but I mute a lot and read the captions. Each to their own, though.....

Yes! I was watching the wooden cutting board, the rolling pin vice a mallet with something covering the chicken, then the plate on top of the cutting board, and fingers touching everything. It was a little much for me who washes at every step.
