Entirely too late to this but Rob wanting Bran to surprise Catelyn in horse form is more believable if we assume it takes some amount of practice and skill to maintain that form. Kind of like warging and maintaining your focus as we see when Bran tries to focus when he wargs into Summer to scout when traveling. Catelyn wouldn't expect Bran to be ahorse since he usually spent most of his time climbing and listening to Old Nan's stories instead of training with his brothers or Ned, and especially unexpected after the whole nearly-died-from-falling-off-the-tower thing.
