I love the stems. I need my change in texture. Smoked turkey. Water & chicken broth. Vinegar. Soul seasoning and greens seasoning. Garlic and onion powder Cajun seasoning. And when it’s about 30 mins from done, a lil sugar. Low heat. They should take about 3 -5 hrs. An hr or 2 with just the meat. Then 2 -3 hours with the greens. Depending on the temp. Once you learn about greens, you can do it in 3 while monitoring your liquids. Onions are great, but optional. A fire cheat is no vinegar then mix some onions, tomatoes, Italian seasoning and vinegar to top your greens

I've been seeing a lot of posts and even inquiries from family and friends about "how hard it is to cook collards". And I'm stunned to silence. They are to me the easiest. You can always find them. They always look beautiful and bountiful. They of course take longer than other greens to cook but that to me means they are more forgiving. You have to be careful with your delicate greens because risk so much. Give collards the love they deserve.

I used to think that too, and then I realized they just take time. Easy as pie once you realize it just needs some time put into it. lol don’t start greens at 2 pm for dinner at 5

Great recipe bubba. Your winter vegetables lose their bitterness once they have had a Frost. If you have people selling local collards or cabbage, get them after the first Frost, you will notice , their will be no need for sugar. Thanks for sharing.

If you ever and I mean ever- try collard greens in the pressure cooker with the stems for 40 minutes. Imma tell you in advance- "You're welcome"😉!! They are the best, most flavorful and the tenderest.

Love the video! I personally think its easier to clean them on the stem. And cook / roast the turkey and garlic, onion first to develop more flavor. But errthang else 100% on point.

I always remove the stems from my collard greens. I do this for kale too and call it "removing the sticks." One time i purchased the pre-chopped ones but still wanted to remove those stems. It was so much more work...never again. I make vegan collard greens with very similar ingredients but have to sub in liquid smoke to get that smoky flavor. they are so good!🤤I'll have to order your all purpose seasoning some time and try seasoning them with that.

You just reminded me. My mom used to make a topping she called "tomato goo". Not sure of the recipe, but contained diced tomato, onions and/or scallions, vinegar and seasonings. Good memories!

You got that right. Work on preparing a flavorful broth first and foremost. What I do and I use smoked turkey parts. It’s so good! It’s not just for southerners anymore. The secret is out.

I use smoke neckbones. Smoke turkey necks don’t have as much grease that is needed.

The smoked turkey necks and leg is adding the flavor(more in my opinion) than bacon would. If you'd prefer pork just use smoked ham hocks instead.

I find that when I cook smoked turkey wings, the resulting broth, once cooled congeals due to the fats or collagen released. Any way around this? Also, what did you do with the skin? I prefer the wings as there are no pin bones to worry about and they are pretty meaty.
