My grandmother raised chickens and sold eggs in the 1940s & 50s. She didn't feed them because they naturally ate bugs and produce scraps. She never refrigerated the eggs. The hens keep them warm when they nest so they don't need to be cold. She only washed the shells prior to cooking them. Washing them is what makes it necessary to refrigerate them. Great video! ❤

Egg yolks raised on pasture have orange egg yolks, you rarely see that in grocery store eggs! When we were in Scotland the food was so much healhier. Beautiful orange yolks, all pasture raise meats! Food was cheaper too. American food is factory farmed crap.

We Euros do not remove the cuticle from the egg and we vaccinate our chickens against salmonella. In Germany you have to go out of your way to even find non pasture raised eggs. Caged "battery" chicken are illegal. There are some that are just "free range" without specifying pasture but those all go to the fast food industry and large scale industrial processors.

Thank you for defending the humble, wonderful egg. I have two eggs every morning with sourdough toast and 15 g of baby spinach. This breakfast starts the fat burning process in my diet plan. I lost 8 kg since last Christmas. Thank you, Doctor !

Thank you Doc, great video! I grew opposite as you, didn't have eggs in the fridge till later in my teens, I'm 57 now, and everything you say is true. My grandma kept the eggs in her special basket and I befriended all the chickens and roosters and the geese and turkeys and so on. I was amazed by the younger generations,for some time now, they don't like anymore the eggs, meat and diaries as well, that are naturally produced - they say the taste is different and they don't like it. I hope your videos will change their mind and I'm grateful if this might educate them, at least on how to eat. I thank you as well for your videos and for sharing your knowledge with the world, for the work behind them! ❤

The color of the yolk does depend on what they eat, but pasture raised may not be that dark orange color. It depends on the pasture. And...whether pasture raised or in a factory, you can put things in the feed to get a dark color - which may or may not indicate carotenoids.. Get to know your chickens :)

😊 we call eggs "bum nuts" in Australia. Grandma lived to 97 eating chunks of butter everyday, salt too and cream. It is the ultraprocessed food that is the killer.

I am amazed! I never saw Red-yellow egg yolk. I never knew all the health aspects. I stopped eating eggs regularly because of my misunderstanding of cholesterol risk, and I didn’t know that healthy eggs do not need to be refrigerated. I have no problem with paying more money for healthy eggs. Now I know what to look for. Thank you once again, Dr. Li!

We raise free range hens for eggs. They are the happiest creatures. The yolks are indeed bright orange and absolutely delicious!

Eggs are tasty, too, I always get pasture raised when I run of eggs from my daughters chick's that are pasture raised. Also, I leave those out until washed off . Thank you Doc. for this video 🎉

This is so true...I have been eating eggs 2 to 3 a day and my Lipid profiles are perfectly fine! As long as you do not mix it with high saturated fat foods, you will have great benefits from eating eggs everyday.

Long ago when I was younger I ate daily a lot of eggs with butter mostly with bacon and my cholesterol was perfect. These days I had to limit greatly these foods to keep my lipids on healthy side

Egg yolks are very healthy unless its some store bought kinds, then the levels drop some, eggs do not cause cancers...overfrying can be harmful, but beyond that eggs are VERY beneficial, especially homegrown ones with a good diet! We are WHAT OUR ANIMALS EAT

@19111959 I raise my own Chicken, so i KNOW what they get for vitamin and nutrition, I buy my GRASS FED beef from a local farmer, done up by a local butcher, I get my produce from an Amish farm I know and trust for over 35 years, I know from LIFE that fast foods are horrible, you dont know how many DOWNED cattle went into their mix of DNA beef, wont trust their chicken due to lab grown meats...I only get ONE BODY, I'll protect what goes in it!

Cook the eggs with olive oil below 300 degree otherwise the good oil will change to bad oil.

Hey Dr., great info. Regarding egg yolk color it seems some farmers now use additives to "dye" their yolks to meet the demand of people wanting orange yolk eggs. Looking online I have found that paprika, marigold petals, chili flakes, and alfalfa feed as some of the popular additives. Also, I have read that many of the bigger feed mills automatically have started putting these additives to change the yolk color. Just fyi.

Nice video! I love and pay the extra for pasture raised 0:03 eggs. They are certainly worth it! My favorite brand is ‘Vital Farms’ raised on family run farms. I cook my pasture raised eggs in pasture raised dairy butter. The flavor and nutrition cannot be beat. I do not cook with olive oil, I put it on my salads. 😋

Hm, I have read that saturated fat is better than poly-unsaturated fat because it does not break down as easily into harmful free radicals. Btw, I generally use lard to cook my eggs, has a higher burn point than butter, so fewer advanced glycation end products. I also would like clarification on the difference between butter from organic free-range non-CAFO cattle vs. cattle raised with chemicals and glyphosate-impregnated soy and grain.

We still have horrible studies that don’t regard other risk co-factors or interpret with sufficient clinical knowledge. We just had this total confusion in the xylitol world - and also in some mouthwash studies that have scared everyone in 2024. Why don’t scientists doing studies talk with clinicians to see if their hypothesis is missing something?

I enjoy your videos as I find the information based on your research fascinating. I trust the ones that you do directly as opposed to others which use your name but don't appear sincere. The question I have about eggs is how many can one eat in a week. I have high bad cholesterol and was told by my Dr that I could eat only 1 omega 3 egg a week. I usually buy large eggs because I like to bake with these, although they do sell small and medium. Does the size of the egg matter as to how many one should be eating per week? I find the information you provide very interesting and I am looking forward to reading your book! Thank you so much!

Also note that caffeine potentiates the choline in eggs, making it more nutrient available. People have been drinking coffee and tea with eggs long before we knew what choline was. How cool is that? Healthy cravings are your body requesting what it needs.

There is nothing wrong with butter. These doctors always talk about gut health but omit the butyrate in butter that is excellent for gut health. While I like olive oil, it does not compare in comparison with butter when it comes to flavoring an egg.

I’m a plant based eater but ate eggs for a month for protein. In fact my cholesterol went very high and my CRP was through the roof. I stopped eggs for a month and my doctor tested me again. Cholesterol and CRP dropped back to normal. Eggs are not good for me. Everyone I know over 60 who eats eggs has had cataract surgery. I’m 71 and don’t have cataracts.

I learned that in order to keep all the nutrients from the eggs that we cook, we need to keep the yolk intact. So, boil the eggs is the best way to keep the nutrients. Scramble eggs diminishes the nutrients because we break the yolk.

That's not true - scrambling eggs causes a decrease in B vitamins and selenium, but keeps more healthy fats, vitamin D, and vitamin K than if they're boiled. A fried egg may be best

Dr Li, some say extra virgin olive oil should not be heated. Would you please inform us about this? Is there a maximum temperature that we can heat it?

Heating olive oil will cause oxidation. Personally, I only use olive oil cold, and add it after cooking. As an alternative, use tallow or lard, which are much more stable, for cooking. Even so, avoid burning, as even saturated fat will eventually be damaged by heat.

When I had chickens they would hide their eggs in nests. By the time we found them they may have been in the garden a week or more. The eggs were still fresh and good and never harmed us.

I am so confused, Dr Li. I am an ethical vegan as well as for health. I saw a video of a a chicken expelling an egg. It was like a woman giving birth. I do not like the egg industry practices, especially how they discard/kill male chicks. I hear your recommendations for the type of eggs to eat, but I feel that eating any eggs indirectly contributes to the "BIG EGG" industry. Also, I have some plaques in my coronary arteries incidentally found on a CT scan, and high LPa. Strong family hx of early heart disease due to SAD diet and smoking (my mom and her mom). I am on a statin. Do you recommend eggs and olive oil for people with heart disease? Would it be better for me to get my nutrients form plant based sources? BTW, I have always been a fan and own "Eat To Beat Disease". Thank you so much for your advice!

Paraphrasing here, but he loosely stated in an interview (forgot which one) that he supports ethical veganism. He’s also said numerous times that people should have liberty with their food options (junk food and overindulgence excluded obviously). So if you put those two ideas together, it’s safe to assume that you shouldn’t eat eggs just because he recommends them. I think he would have the same opinion. Do what you feel is right for yourself and the world.

No, Pasture Raised eggs do not have different colored yolks compared to other types of eggs. I buy strictly organic pasture raised eggs, different brands. On average, the yolks do not have brighter colors compared to other eggs bought in the supermarket.

I'm in Japan, and I almost never see eggs in the refrigerated section. They are kept at room temperature.

Triglycerides are lowered by burning fat as energy. Eating a type of food does not lower your Triglycerides.
