Every time I hear someone pronounce espresso as expresso I die a little, but yes, just as its great to have a bit of coffee in chocolate to enhance the chocolate flavor, in a coffee dessert its great to have a bit of chocolate as well. Or a Texas style chili for that matter. Definitely going to try this recipe. There is a chocolate cake I learned long ago, that is a modified version of what we in sweden calls kladdkaka (sticky cake) which is a chewy goey chocolate cake. But the trick to this one is that you add a layer of tosca like topping, basically you boil sugar, syrup, cream and butter and then put in a lot of coconut flakes. That mixture you then spread on top of the chocolate cake.

Brownies are the perfect chocolate fix for me, half-way between a candy bar and cake. I love the chew & fudgy versions best, a mixture of coconut oil & butter makes for a really chewy texture. Chocolate & espresso are a match made in heaven, topped with Haagen Dazs coffee ice cream makes it swoon worthy.

Espresso brownies are my favorite. I use espresso chocolate chips in my brownies. Nestles makes them and ohh they are so good. Brownies are excellent with espresso coffee chip Gelato. Its a step up from the norm dessert.

Brownies were the first dessert I learned to bake and successfully make from scratch! Still one of my favorite desserts to this day, especially since chocolate desserts are at the top of my list! I baked brownies from scratch for my best friend once in college to cheer her up from something that happened back then. But yeah, I have heard espresso is great in brownies, but I would never be able to have brownies in the evening if that was the case. Wouldn’t be able to fall asleep.

My favorite brownies are the ones I used to make at a bakery I worked at. They had both melted chocolate and cocoa powder in them, and I would always drop a dollar in the cash box to have one for myself when I sold them at the farmer's market. My mom's recipe for one-pot cocoa brownies were very good as well, and those were easier and less complicated than the ones I made at work. If I make bourbon balls, that calls for dry brownie crumbs rehydrated with bourbon, so a box mix works better in that case because they tend to be drier than brownies made from scratch.

Excellent tip that works! I read in a cookbook long ago... always add a bit of espresso [or even just a small bit of dry instant coffee] to any chocolate recipe. You won't taste the coffee flavor but it SO enhances the chocolate! I think it has the same effect as vanilla does - you don't usually taste vanilla in anything you bake, but you WOULD miss it if it wasn't there. Thanks, Darren - love watching your videos!

I remember having brownies at the Palmer House. I like them fudgey, cakey, gooey, hot, cold....I just love a good brownie (and espresso coffee powder is my similar secret ingredient). I love Black Walnuts in mine to make them taste old fashioned.

I've always like having some chopped walnuts in my brownies. I feel it balances out all that sweet. I never knew or heard of adding a bit of espresso to the mix! I guess that's why Chef Darren calls it his "secret" ingredient 😄

I always add a bit of coffee granules or an espresso shot in any chocolate cake I make. It really does make a difference. Just don’t put too much or you’ll end up with a mocha flavoured cake. Which isn’t a bad thing tbh!

My grandmother used to make a chocolate cake that also contained coffee. This was in the 70s. I think even a bit of instant coffee granules (added to liquid) perks up the chocolate flavor! (I prefer pecans, but yes, I agree with you about the walnuts @stephaniecowans3646 )

This is such a fun video! I learnt to bake brownies from scratch as a newlywed in Australia - no box mixes existed. We love very dense chewy brownies - and my secret was to use whole wheat flour and raw sugar. We also love VERY chocolate, so I use cocoa powder, then added chocolate chips instead of nuts, and then... Spread chocolate chips on the hot brownies to melt, and when everything cooled, added a layer of Nutella on top.

I'll have to try putting that shot of espresso in our scratch brownies. Most people don't know how right you are about the difference between boxed and scratch brownies. My family loves it when I make turtle brownies. They prefer pecans to walnuts.

No problem here with espresso coffee. I use coffee in brownies and banana muffins. I could make espresso but I just take a whole pot of coffee and reduce it to one cup on the stove... "supercharged" is exactly the word I use.

I have used many of your recipes to entertain guests….well, as fate would have it, I spoke to your DAUGHTER on the internet just a few moments ago….whilst watching your videos! I made the connection when she said that you were the chef for the Queen Mother. This is the first I've known of brownies in the UK. And the Queen ate them! I'd known she loved chocolate. I've been under the impression that brownies are uniquely North American. I prefer cake-like with walnuts.

Thanks for sharing this! I love brownies. This is similar to a recipe that we used to make. It was on the back of bags of Nestle`s chocolate chips, next to the Toll House cookies recipe, which was a good recipe, IF they were baked thickly in a smaller than 9x13" pan.

I thought they were called Brownies because of the mythical helpful house Sprites, that the Ladies used to give them sweet cakey treats as payments of sorts because the little creatures loved them so much.
