If you lower the temperature to 320 degree and bake for 1 hrs and 15 minutes the cake won't brown so fast and you won't have to cover with foil.

This is an amazing recipe. For those people asking it they can add less sugar, egg sustitute, no cream cheese, etc. You're really asking for a different recipe. THIS is the recipe she wants to share, the exact ingredients she uses is what makes it work and makes it delicious. If you'd like to reduce this, change that, try it for yourselves and please share the results with the rest to see if those changes worked.

I made this cake, but made some tweeks in the recipe So instead of 2 1/2 sugar, I used 2 1/4, and instead of using 1/2 cup of milk, I used tangerine juice. I thought using 2 cups of icing sugar for the glaze would be too sweet, so I reduced it to one cup and used cream cheese to thicken it and used tangerine juice instead of the milk. My family loved it so much. As for the temperature, I put it at 320 all the way through...the cake was golden brown. Thank you

Do you use corn starch because you are using all purpose flour? Could you use cake flour instead, or would it lack structure from having less protein?

Apparently you can’t get cake flour in some countries, like New Zealand, where she is. So AP + cornstarch aka corn flour is her substitute. I live in the US and I’ve made some of her recipes with the AP/cornstarch mix and had GREAT results.

Block style, not tub or whipped. In the US it comes in a foil pouch and a thin cardboard box. Use a brand that doesn’t have thickeners. Nothing wrong with them inherently, but they get wonky if you whip or heat them too much.

I use 1cup or 200g sugar.. comes out good. All her recipes i use 200g/1cup sugar .i dnt like sugar that much. The cakes ain't too sweet when using 1cup sugar or 200g sugar...
