I just love you, Dr Li ! I've gotten so much helpful information....and bought your book. (Eat to Beat Disease) It is helping me to better understand foods. I am a plant-base person who is feeling healthier each day, thanks to you. I love Salmon as one of my healthy fish; though wish we were able to get more of it where I live. Because it's now cooler, and evidently not available, unless you get it frozen from Alaska, Sock-eye, yum! Look forward to your next "teaching".

Where I live I can buy 2% yogurt with no emulsifiers. The whey separates, but you can just stir it back in---or use the whey for cooking (pancakes, soda bread, etc.) and then you have super-thick yogurt.

@@janicehartiens9141 pour 1/2 gallon whole milk in instapot. Heat to 180 degrees stirring frequently. (I use sauté for this part). Turn off I take pat out and set in cold water in sink to cool to 110 degrees. Stir in 1/2 cup of plain live culture yogurt. I like Greek. Put on lid set yogurt . Cook 12-20 hours. I do best with 20 but experiment. Then you strain the whey off. Put what remains in glass jar and enjoy the yogurt. Cheap easy and yummy. The straining out whey is slow. I use the whey in fermenting veggies, to add to soups and sauces and my plants also love it. There are many videos on KZbin. Many have you add sugar I don’t do that.

Kefir yogurt vs.standard yogurt ■ Comparison favors kefir yogurt with more, much more beneficial properties. Organic kefir grains combined with organic whole milk to make kefir milk is my personal practice in kefir yogurt which is adding the kefir milk in layers (overnight refrigerated) in fruit - kefir milk - granola/grain cereal. Kefir butter, kefir cheese, and kefir milk: kefir whey is the byproduct from making kefir cheese, and organic buttermilk is the byproduct from making kefir butter when organic heavy whipping cream is combined with kefir milk to churn the fat to butter and separate the milk/buttermilk. @@jilll4649 j4 - When I made my Greek yogurt it is beautiful, yet I found that about "9ish" nutrients were in the product; that is bought Greek Yogurt use that culture with organic whole milk to make yogurt/s. Kefir was said to have about "40ish" nutrients. Kefir can be doubled fermented by once it is jarred for the refrigeration, add a piece of fruit and counter set the kefir with fruit for one hour (loose lid); over an hour of a second fermentation is said, "to [n]ot have any additional benefits." I keep the fruit in the fermentation until consumed. Banana, cherry, or fig (any fruit/mango is excellent) seems to always keep fresh in the mix. M

What categories do cheeses like Cheddar, Parmesan, Mozzarella, Gorgonzola, Stilton, and Monterey Jack fall into? Is there a chart somewhere? That was really interesting about Vitamin K2. Can you talk about osteoporosis? I gave up dairy for 15 years due to autoimmune protocols for chronic illness. Despite walking everyday for 30+ years and yoga for last 14 years, I was diagnosed with osteoporosis at age 61. It's nearly impossible to meet calcium requirements on a non dairy diet. Very challenging. I'm not sure if this was a contributor to my osteoporosis. I've also been on various nutrient dense healing diets over the years with weight loss/thin many times so I'm not sure if this was also a contributor.

I dont know if you did, but you should take the RDA of calcium in tablet form and add K2 and D3 in order for the calcium to be 'directed ' to where it should go, ie, to your bones and not in your muscle and arteries. Take these with fatty food.😊 plenty of good info out there if you search. Also train with steadily increasing weights . Think functional weight training not weight lifting.😊 Yoga is great for flexibility, but when walking add weights if you can, either by wearing a rucksack with bottles of water which you can pour away if it becomes too much. Or do shorter weights wearing a weighted vest, and wear this around the home for intervals as well.😊And if it were me I would be seriously considering if my life is more important than not eating dairy food. If you cant because of lactose intolerance find lactose free dairy or give goat dairy a try. Much more gentle on the digestive system . I cant eat cow dairy but goat dairy I can tolerate and quite honestly goat butter is superior😊
