Made it last weekend and was great. Never thought of putting chopped olives in tuna salad but they turned out to be the star of the dish.

So nice, I actually printed it twice! It’s a marvelous recipe that’s great as is with plenty of room for the home chef’s creativity. Now that I’ve followed the recipe, I’m going to try it using shrimp or chicken instead of tuna. Thanks, as always, Albert! You know how much we appreciate you.

Some people may find it too much, but I really suggest using the oil from the tuna to make the mayonnaise. It's much easier to do than you think. I do this with tuna salad all the time. (I use the tuna oil plus regular olive oil, then finish with a really intense extra virgin olive oil.) If you don't want to do it from scratch, you can *easily* enhance store-bought mayo by whisking some or all of the oil into it. Add a little oil at a time and whisk until the mayo comes back together. You can do this an absurd number of times. If it seems like the mayo is going to break, just add a small amount of mild vinegar (or the tomato juice) and keep going! I do the latter method with a good extra virgin olive oil to make a sauce for Spanish tortillas

I have chickens and use an egg steamer to cook the fresh eggs, otherwise they are hard to peel. I make a fresh tonnato style mayo and enjoy a dollop on slices of tomato, but will try your stuffing. The addition of stuffed olives sounds devine!

That's the brand of tuna we buy when we go to Spain!! (Yeah, I buy tuna here in the UK, of course, but I miss going on holiday). This recipe looks really good, but I'd omit the olives. ☺️ I love my tuna with a dash of balsamic vinegar instead of mayo. But oh, I love it with black pepper with tuna and tomato, it brings out the flavour. Great idea, will be trying this. Love the added salt to extract the excess water.
