One bulb is just enough for me. I have a strong relationship with garlic, onions, chillies , simply put I have a strong relationship with tasty herbs and spices.

I finally made this dish today and it was so delicious. I paired it with jasmine rice, fried oyster mushrooms and fried green tomatoes. This dish was the STAR of the meal though, and everyone loved it. It’s hard to get people to see traditional African American dishes in a different way (hoppin John) but it was a success. Thanks for sharing!❤

Hi Andrew! That looks so delicious will try your version, in Puerto Rico we call that "frijoles guisados" and is made basically the same way except for the spinach lol. Is delicious as a stew or a soup here and is full of "verdura" or root veggies such as pumpkin, yucca or simple sweet potato or russet potatoes. Usually served over rice with yellow plaintains or tostones (fried green plantains). Happy sunday!!

I made this today and it was pretty good! I'm not vegan so I used chicken stock and added some cauliflower for extra veg but the garlic, dill and fennel were delicious. I also transferred to a crock pot after browning, worked just fine.

I don't know if this was a just something that my family did but my mom would cook melon skins and dumplings, sometimes with coconut milk or without. I discovered that somethings that we cooked in Jamaica wasn't what most Jamaicans did. Guess mom " tek are anh and mek fashion ". Now I pass that cooking style onto my children and it is even more creative as I live in Europe and is married to an European, friends with people from several Asian countries , basically my friends and family represent the Jamaican Motto " Out of many one nation ". My cooking style is just that.

Love fennel. Love black-eyed peas. This recipe will be cooked this week!! 💯 Also, don't throw away the frilly green tops from the fennel...use it as an additional herb. Looks like dill but has that extra layer of fennel flavor But not the stems...those are too tough.
