Looks yummy. I recently read that they have changed some vinegars. Some have 4% acidity. There needs to be 5 % if you can vegetables for a stable shelf life . Have a great holiday 🎉

Salt your zucchini and onion first, let it drain off some liquid and you can pack more in the jar. Also keeps more crisp to the finished pickle.

You can but they aren’t true pickles…I make some and they are called half sours. Maybe leave off the sugar? Mine are sour instead of sweet.

I’m southern and the only place I’ve had cornbread salad is at a local restaurant or at the Cornbread Festival in Tennessee! It is delicious and I’m not sure why I never have made it.

We do cornbread salad... except its layered in a casserole dish and we put green chilies in the cornbread batter. Our sauce is a cream cheese and ranch combination 😋❤

@@thepapaskitchen I was born in South Carolina and in 70 years never heard of or saw anyone make it. Your zucchini made me think of my mother in law. Early morning she would slice cucumber 1or2 long ways and put about 2/3 the long green skinny hot peppers in a glass she poured vinegar over them and left them on the counter till we ate lunch. She didn’t cut the peppers. She and papa had a very big garden . She cooked fresh peas butter beans squash just all fresh veggies and we had fresh tomatoes the cucumber and fresh vegetables every Sat and Sun. She worked during week. Made a pan of biscuits every day. I miss her she treated me like I was a daughter.

Great recipes Papa and Nana both! Cornbread salad is a staple in the south! When you were making the avocado salad it reminded me of a fresh tuna salad that both me and my mother loved. Take fresh tuna and grill it to a medium rare with salt, pepper and olive oil. Then cut into chunks and add thinly sliced red onion and cut up avocados. Make a vinaigrette of your choice. (Italian style) And mix all together. Its a delicious salad! Best wishes for the holiday!
