I think Gordon used too many ingredients for this recipe, and something that I've been learning with Italian cooking videos/blogs/books like Pasta Queen & Mateo is that you literally find perfection out of simplicity; the fewer elements to a dish the richer its flavors will be. 😌

He seems to be a bigger extra vergine olive oil addict than Jamie Oliver, which is saying a lot. I hope, there's an olive oilaholics anonymous, where they can be treated. They're wasting too much of good oil all in the wrong places. Why? They're neither doing themselves nor their oil any favors.

Anyone who's been to Italy knows this is exactly how they feel about food. Italian cuisine is delicious! One would think there's a LOT that goes into it but their ingredients list is always so simple. They are the masters of it. The world would be a better place if everyone simply kept it Italian: just simple & gorgeous ♡

I would’ve just used garlic and not worried about shallots, used parsley instead of basil and anchovies with a few ladles of pasta water instead of the stock. I think linguini would’ve been a better pasta choice over thin spaghetti also. Just my opinion and how I would’ve done it

Gordon is a legit Michelin Star guy, for sure. He’s best with beef, lamb, shepherds pie, chicken, etc., at least from what I can tell. He’s taught me a lot of these videos. For Italian, I’m going to TPQ from now on. 😂

Lmao. In middle school I had a brief obsession with pasta, but you know, Americanized chain restaurant pasta. But I think the first time I had shrimp scampi at freaking Red Lobster, it wasn't on pasta but in a small ceramic baking dish nearly bubbling over with garlic, butter, olive oil. So delicious to my tweenage taste buds. Over the last decade the trends turned to shrimp scampi on pasta, and then it kept morphing into this kind of dish that's loaded with onion and veggies. This looks more like a generic "shrimp primavera" pasta at Olive Garden, which I totally would have ordered back then too. 😂 I have been educated on the ways of homemade scampi now thanks to the Pasta Queen cookbook ✌️

Gordon cooks his "impressions" of many classic dishes ~ in a frenetic style that lacks clarity and knowledge of what he is doing and why. Still, he made his Frankenstein shrimp scampi in under 10 min, like he promised. But Parmesean on seafood ~ that I just can not abide.

I love them both. They cook different styles pasta queen says never but she has a couple of recipes thst she does cook tbe dried pasta in the sauce no big pot of water etc. And there's so many horrible recipes on youtube that we should get these people. People just post any bad recipe lately trying to get views instead of a job. Gordon is basically a good cook who didn't follow stricter italian tradition.

It's a very common mistake for people to use olive oil in the pasta water when they're in a rush. It keeps the pasta from sticking. But the same effect can be achieved with cheap vegetable oil.

Gordon trained in France. Everything he did here would basically be acceptable in the French system. For example, it’s such an Italian thing to say “yeah, maybe parsley instead of basil” ‘cause that’s such a classic Italian pairing (seafood with parsley and white wine, garlic etc). Actually, it’s the same in France, except French gastronomy is a little bit more adventurous in that basil would be perfectly acceptable. Also, in the French system, chicken stock generally goes very well with fish (although, I’m not sure about shellfish). So I see where he was coming from, but I wouldn’t have done it. Not with shrimp. So yeah. This was a bit of a mishmash.

Never used Gordon's recipe. What I do is an amalgamation of various scampi recipes. Mine is simple but enhances pasta or just delicious eating with bread. Shrimp size depends upon what my budget is and what's on sale. I usually do small or medium shrimp. Trying to buy real scampi in this area is futile. I've learned to be careful about cooking dishes from other countries because of what some cooks consider to e Korean food. They murdered the food an no Korean will eat it! Also differences between popular idea about Mexican food and the Mexican food I learned to cook from Mexicans. BIG DIFFERENCE! I avoid fusion foods. Kim-chi tacos is just wrong!

A compound butter of Roasted garlic, fresh garlic, lemon juice, parsley and a pinch of salt. butterfly shrimp, place in gratin dish top w/ compound butter and breadcrumbs. Broil for 8 to 10 mins and VOILA! serve with Tagliatelle PREFECTO! My veg of choice is Asparagus. Less is more folks.
