@happypants94282 жыл бұрын
As an Asian man, I’ve grown up putting soy sauce in freaking everything. It adds depth and the coveted umami flavor. But I can see Italians recoiling at the thought. However, they should be far more forgiving to Worcestershire sauce. That stuff is not too far off from the ancient Roman delicacy Garum.
@00B.2 жыл бұрын
If you listen the main criticism wasn't towards the soy, nor towards the garlic nor the butter but the fact she put cheese on the oyster sauce. It's an unwritten rule of Italian cuisine: no cheese on seafood. Also I think that a good pecorino or parmigiano have a lot of flavor and are somewhat salty already, if you mix them with soy sauce which is also salty you will kill any other flavor.
@cody78892 жыл бұрын
@@00B. You also haven’t tried it, obviously. There are no rules in cooking. And if that was a “rule” you wouldn’t put cheese on anything with guanciale in it, would you?
@tizioincognito57312 жыл бұрын
@@cody7889 we invented pasta, we all know how to cook and 99 percent of our meals are homemade. We have Centuries of culinary culture. So do not you think we tried ALL the possibile combinations? Dont you think if we say that cheese on seafood tastes like s...t we know what we are talking about?
@cody78892 жыл бұрын
@@tizioincognito5731 The Chinese invented pasta (and tomatoes were brought to Italy in the 1500s from Mexico). Just FYI. I don't really care what "rules" there are. As somebody that cooked professionally for over a decade, I can tell you that "rules" are meant to be broken at times and as somebody that has lived in, studied in, and additionally now spends about half of my year in Italy, I know that every single Italian is going to have a different opinion on what the right way to do something is and it is going to be a strong opinion. So please stop trying to speak for your whole country because it's ignorant. Secondly, oyster sauce rarely has oyster in it and it certainly doesn't taste like fish or oysters or seafood. I take it that you probably don't know that because finding Asian food in Italy is actually pretty difficult and finding ingredients (such as the hundreds of different sauces) is even more difficult. Please don't patronize me. It's rude. If you are too closed-minded to try something new, that doesn't mean that others are wrong. It just means that you don't feel comfortable going outside of your comfort zone. You should try this dish. You'll like it if you let yourself, but my guess is that you'll decide you don't like it before you even try it.

Not a crime, and you can eat whatever you want. The issue is when you post a video as a chef, tossing in random things and claiming it's a traditional Italian dish. I'd make the Asian noodles, tweaking it for my own taste by swapping out the oyster sauce and skipping parmigiano. It's not far off from a noodle dish I make often. I love mushrooms and peas, but wouldn't throw them together with creme fraiche and call it carbonara. Eat whatever you want and get creative, but don't piss on someone's culture. Call it something else.

Watching all the additions that just don’t need to be in these dishes is sad, they could cook authentic recipes faster in most cases! Literally the hardest part of authentic Italian cooking is finding a source for quality ingredients! Edit: I am recommending your cookbook to everyone who says “How did you make that?” I cook a lot by sight and taste so I don’t have recipes to write down. Just quality ingredients, using the pasta water and keeping it simple. Excited to get your cookbook to add more dishes to what I already make. I never learned desserts so I want to learn from the best, if it passes the brother test, I am all for it!
