Hey friends, don’t you just love it when you’ve been craving something and you finally make it perfectly and it just HITS THE SPOT! That is how this entire week has been for me. I have a leftover makeover to share that is one of my FAVS, don’t knock it til you try it! I’ll share my favorite enchilada casserole with a zesty twist, and I finally made the chicken fajitas my heart has been longing for! I really needed those fajitas LOL Oh and a dessert for my mom’s birthday that is literally Heaven on Earth! And you know it was all quick, easy and made with simple, inexpensive, easy to find ingredients that you probably already have on hand. Fajitas looked awesome. Raised a West Virginia hillbilly bean cakes were a regular on our table. My mom would make white bean cakes, fried eggs and sliced tomatoes and I was happy as a tick on a coon hound. Prayers for you and this family of subscribers.

👍yes to the instant read thermometer! I have one and got started using it alot recently. Also, I make bean cakes but instead of flour, I use bread crumbs. I've tried all kinds of beans, black, pinto, and red. You're right, they are all good.

Mel, I love watching you cook. You make your food and dishes the way my mom did when I was growing up. The fried potatoes brought back lots of memoirs. I had to cringe when you were telling us how to clean the cast iron skillet!!! When I had "kitchen duty" as a kid, I remember putting water in the skillet and dumped powered comet in it! Then hide it in the oven! My mom, when she found it almost killed me! LOL

Lol. That bean sandwich brought back really good memories. Our step Dad was feeding 7 children and only two of those children was his. You wouldn't have known that. I thank God for him being in our lives. My Mom became a "house wife" of sorts. She'd work just as hard at home. Mending, sewing, planting, preserving, ironing, cooking and cleaning. He was a "Deputy sheriff and volunteered fireman" He hunted, fished and was a "shade tree mechanic" You know, I'm seriously trying to recall a time we didn't have what we needed. I really can't recall a time.. Now having what you wanted, wasn't even a thought to him. Except, this one time. I saw this dress in a store window. It was on sale and so beautiful. I wouldn't stare at it in front of anyone. At least I didn't know I was. Then 3 days later on my 15th birthday, I had a box, sitting outside of our bedroom door I knew it was a sweater. I saw my Mom knitting it. I opened it anyway. There indeed was that beautiful sweater. But also that dresse. I was so happy, but then I thought.....🤔. I took that dress back for store credit and got my Mom two silk scarfs with matching hankies. I sat that box outside their bedroom door. Within minutes Dad was knocking on the door to see where we got the money for the items. I told him I returned the dress and got those gift for her, from all of us. . I watched tears in his eyes roll down his face as he walked away. No, he didn't go back to get the dress. He let me have and keep that memory. My Mom would wear those scarfs every chance she got. We would have bean patties, bean soup and bean hash. Yes, bean hash. It was made with pinto, or northern beans, diced potatoes, carrots, celery, onion, garlic, corn and spices. My Mom served it over rice. I still make it till this day. Our children will ask me to make it for them on occasion. I'm sure they can remember how. But, as my Uncle used to say. " Very few things tastes as good as a memory" 😊 Happy New Years to you and yours.☺

Let me give you another helpful hint, Use only olive oil on your Iron skillets. I got that from Cowboy Kent Rollins. Also he said it doesn't hurt to scrub your skillets with soap. then put it on the stove eye until good and dry, then squirt one turn of the olive oil wipe out with a soft cloth . do not use a paper towel. I hope this will also help . I love your show.

Thanks for the tips on cleaning cast iron, and very important, oiling it afterwards! I've found cleaning a stuck on stainless steel frying pan works better hot too. I wash out as much stuck on stuff as I can, then put the pan on a hot burner, add a little water and scouring powder, scrub with a plastic scrubber and all the stuck on food comes right off. Rinse & wash the pan as usual and it's all clean. Love watching your videos! Lots of great ideas.

Oh that is a great idea for leftover beans !!!!!!! Love this idea !!!!!! I do potato cakes with mashed potatoes and salmon patties. I just never thought to try it with beans !

I have a super easy dessert that you can customize so many ways. To change it up just substitute a few ingredients. It requires no baking so you can throw it together really fast. Quick and Easy Cookie Dessert CRUST 1 package of cookies. FILLING 1 large instant pudding mix fixed according to the package directions TOPPING 8 oz thawed whipped topping 8 oz package of softened cream cheese 14 oz can of condensed milk In a 9x13 pan just lay out a layer of cookies. Break to fit if you need to. In a bowl mix the pudding up according to the package directions. Pour over cookies and spread to cover them completely. In large bowl using a mixer combine the cream cheese and condensed milk until smooth. Fold in whipped topping. Spread over the top. Cover and refrigerate 2 hours before serving. VARIATIONS CHOCOLATE - chocolate chip cookies and chocolate pudding BANANA - sugar cookies, banana pudding and add a layer of sliced bananas between the pudding and topping BUTTERSCOTCH - oatmeal or sugar cookies Butterscotch Pudding CHERRY sugar cookies, vanilla pudding and add a can of cherry pie filling on top the pudding layer LEMON sugar cookies and lemon pudding I HAVE FOUND THE CHEAPER STORE BRAND COOKIES THAT YOU CAN BUY WORK GREAT AS THE CRUST. NO REASON TO SPEND EXTRA FOR A FANCY COOKIE. Feel free to make up your own variation. Just switch out cookies, pudding and add in a fruit layer if desired. I often since this dessert is so easy will make 2 different flavors so everyone can have their favorite.
