Use a knife to cut into the star and along the seams and then you can easily access the pods after pulling it apart from there. Also, you never really want to open a fruit from the stem since that is where it's thickest.

Mr. Sausage: The easier way to open a durian is from the "tip" (opposite side to the stem that joins the fruit to the tree) by prying it open with the point of a flathead screwdriver. The durian "shell" usually has a natural partitioning to it (kind of like how oranges have segments), so you would have to figure out the "seams" that join these partitions together, stick the flathead screwdriver to the tip of the durian along the seams and then pry it open that way. It takes a lot less effort this way compared to butchering the shell piece by piece.

I'm a Malaysian and we eat durians regularly. The way you cut the durian is that you need a tough knife and poke the bottom of the durian and twist the knife. With enough depth and force, the durian will break apart and split into (usually) it's six parts, then you'll need to pry the husk fraction with your hands and they'll come apart with the fruit sitting on one side of the husk. This method is much easier and it makes the durian quite presentable. Tho I don't really care how you cut a durian, as long as it isnt a chop down the middle. That's like chopping an avocado down the middle. Fun fact : the name "Durian" comes from the Malay word "Duri" and the prefix "-an", duri itself meant "thorns" and the prefix duri-an gives of the rough meaning of "thornage" or "to thorn"

It sounds like everyone who's been telling you about Durian has been mistaking it for Jackfruit. Oh, hey. You should do the Jackfruit Sausage. Jackfruit is often used as a vegetarian replacement for meat, because when it's cooked, it tastes just like it. The only time we had it, we used it to make Pulled "Pork" sandwiches. Literally, couldn't tell the difference in taste, it was mind blowing.
