I'm from northern Mexico and barbacoa is made here almost on a daily basis. I'll definitely try your recipe because I want to show them here that it can be done cruelty free. (I always leave the seeds, btw.) :)

Fun fact.... The seeds of a chilli have no heat. It's the membrane that the seeds are attached to that have the heat. Any heat that you'll find on a seeds comes from either a small remaining fibre of the membrane when removed OR from any membrane oils that have made contact with the seeds. ✌🙏💚

I love this recipe! I upped the heat a little by adding a couple of dried Chilis de Arbol because I had them on hand. I also made the sauce the day before I made the mushrooms, and still have some sauce left over. Perfect!

I made this recipe (and the chili oil) for dinner today, and just finished eating. It tasted incredible! Super savoury, smoky, and flavourful. I added some extra garlic and blended in some jarred roasted red peppers to stretch it a bit for meal prep. Served on corn tortillas with shredded cabbage and pickled carrots 😋 Thanks for the recipe!

Hello Will, I simply love your recipes! I'm from Mexico, this recipe is more like Birria, that is a Jalisco's State dish, which I definitely love 😍. Barbacoa doesn't use chilis on Hidalgo State Barbacoa. Anyway, your recipe really looks great though.

The chili oil is a MUST. And easy to make. I use it for everything from roasted cauliflower to popcorn. It’s a staple of my larder.

The first vegan recipe I saw that made me interested to make it was pulled pork sammies recreated with smoked King Oysters. It looked heavenly - as does this! They really are meaty...and we just found a bunch of regular oyster mushies growing in our yard. While not texturally similar, I bet they would be ace flavor-wise.

It came out delicious! Thank you so much! ..... I've been living in Mexico for 20 years. Vegan for 18 years. Barbacoa out of sheep is very popular here. Brings me bad memories as I got very sick short after indulging in eating barbacoa and other very greasy foods predominantly out of meat when moved to Mexico. ...... My advice; Chile Ancho, Guajillo and Chipotle as any other dry chile have to be soaked in hot water for 30 minutes at least. Then, to remove seeds and stems. Otherwise, they remain very hard even after frying. I blend salsa for at least 2-3 minutes. The rest of your cooking process I followed as described. No black vinegar in Mexico so I used white one. Next time, I'll use less paprika because even for my husband's mexican palate this dish is too spicy. 😂😂😂

Oh my!!! Growing up, barbacoa was served often at parties, prepared by the family, we had a brick-lined pit in the ground , us kids prepared the Chile sauce , which is key to this dish) we always gave our dad the credit. Definitely on my “Must make list” thanks Will! 🔥

Had tacos made from oyster mushrooms once and had to ask the server if they were vegan. So good and crispy, if browned and seasoned properly.

how do you keep the KO mushrooms from being slimy? Whenever my wife and I cook with them, the result is always sluglike.

Will - can you create a chili-oil playlist for the 8 zillion recipes that use it? So much easier when I know ahead of time that I need to prepare something else before making a recipe. Although with all those spices and multiple chilies, it’s probably not critical to the Barbados, right?
