[ Japanese Sweet Potato Crème Brûlée ]
--------------------- INGREDIENTS ---------------------
🍠 2pcs Japanese Sweet Potato
🍠 35g Sugar
🍠 250ml Whole Milk
🍠 2 Egg Yolks
🍠 1/2 Tsp Vanilla Extract
--------------------- INSTRUCTIONS -------------------
1. Brush & wash the sweet potato thoroughly
2. Bake the sweet potato at 200°C (preheated oven / air fryer) for 20 minutes
3. Turn the sweet potato while its baking halfway
4. Dip the sweet potato in water for a seconds
5. Pop it back into the oven or air fryer for another 15 minutes at 180°C
6. Slice the potato into half when its done baking
7. Scoop out some of the flesh to set aside (make sure not to break the potato)
8. Add egg yolk & vanilla extract into a bowl of sugar, whisk it well until the color turns pale
9. Add milk in a pot turn on low heat to simmer the milk (the milk is done when tiny bubbles appear around the edge of the pot)
10. Slowly pour the milk into the sugar mixture (keep stirring while pouring the milk
11. Pour the milk mixture back to the pot & turn on medium low heat
12. Keep stirring the mixture until it thicken
13. Cool off the mixture, then add the flesh of the sweet potato into the mixture
14. Blend with hand blender until smooth
15. Pour the mixture into the potato gently
16. Pop back to oven / air fryer to bake for another 10~15 minutes
17. Sprinkle sugar on top of it & torch it
