This type of macho attitude animal hunting and eating meat always bring out the barbaric nature of human beings. Usually the Outdoor Chef Life guys is calm manners polite dude, but did you see when he caught the tuna and you saw his elation of excitement? In some sense this ideal animalistic persona is what he means when he compares that to a human flesh. Some Japanese people when talking about eating a huge octopus that probably lived long time talks about it probably ate dead human beings and excited about eating that octopus.

I tend to prefer the nontraditional inside out over maki. Alot of places here don't serve fast enough and the nori ends up getting chewy. I love how chef Hiro makes rolls, nothing but fish and avocado, no cucumber, no other nonsense. Clean flavors.

I'm a seaweed on the outside guy. I like the way it looks and tastes. I make makizushi both ways, rice on the inside and on the outside, but prefer the traditional ways as well. On a side note, I wonder if these guys have ever had a problem with parasites after eating so much raw fish? The FDA says that in order to kill the parasites found in most fish used for sushi, the fish must be frozen rock solid somewhere between 15 to 24 hours before being thawed and eaten raw. I've eaten some beautifully fresh Maguro and never had a problem with parasites, but no matter how fresh the fish, there's still a risk of ingesting parasites.

Excellent location for fishing...been there, Mission Bay, a few times. Nice weather too for that 23' whaler. Want a nice place to stay while there, head over to the Del Coronado Hotel. It's been there for decades and is upper crust. Not far from Baja, CA where they have very good fishing waters. Wondering about the process, catch filet and then freeze or refrigerate to age it two days? P.S. Thanks for the good photography.

ty so much for your kind words...on the boat he was using his iPhone XS Max...4K 60FPS. On land cleaning fish we used the footage from Taku side since our color was not so good, but later part of making sushi, we used our footage; he was using Sony a6500 with Sigma 16mm 1.4 lens.
