A lot of people don't understand this but even sushi at those fancy places are not necessarily fresh. Fresh fish has no flavour. When you freeze/marinate fish for a few days, the true flavour comes out.

I just wanted to say thank you so much Hiro is my hero I've been watching you for years started watching when he was at the restaurant and have watched him go to different parts of the world seen him feed stars and make fugu cheered him on when he made it into the Guinness book and so many more things. in illinois i get the same tuna sushi grade block and masago just like you got in this video. it is what it is we dont live in florida so we do it with what we have here. all because of watching this channel. keep the vids coming love em. that frozen tuna block here is $19.99 a lb. the salmon fillet whole is $14.99 a lb farm raised sashimi grade runs about $25 for the side (fillets)
