About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I'm still learning to cook Thai food and your videos (and web site) are my best teacher :). I like my Tom Kha Gai a little spicy so I added a few sliced bruised phrick khi nu...aroy.

@fyshy1 Thanks for watching! That is regular lime juice, we don't use kaffir lime juice in cooking, only the leaves and zest

This looks amazing you know I like the simpler version of Tom Kha. I know a lot of authentic recipes of this soup put tomatoes, and onions and other things. Which is fine, I just enjoy the simple chicken, mushrooms, and scallions. ❤️🤤 lemon grass, galanga , coconut milk, garlic, ginger, palm sugar and some Thai chili powder or paste to make it a little spicy. Some lime. A little sour not much, Sweet, savory, spicy, creamy and rich white soup. 🤧 amazing I loved this video a lot. Amazing job. And I’ve had quite a few bowls of Tom Kha in my day, and I only like it at maybe two or three restaurants out of dozens I’ve tried. Sometimes places make it way too bitter and sour. Or it’s not spicy at all. Then when I go home I add sugar and spice to it. But when it’s done right mannnnnnn, it is the best coziest soup out there. ❤️🥰

I like your channel a lot I used to live part time in Thailand. They used to com for me Tom kha cai without the coconut soup which was really tasty also. What is the name of the soup prepared that way? อาหารของคุณดูอร่อยฉันแน่ใจว่าคุณทำรอยยิ้มท้องใด ๆ

@bebbubblybeb Regular sugar is fine, if you want to use brown sugar go with light brown, the dark brown might add a dark color you don't want. Good luck!

Hi, I ran into a spicy thai fried shrimp dish in Huntington beach. So I finally perfected it after a few tries at home. It's so amazing. My neighbors grandmother tries to pay me to make it for her after I gave her plate lol. I cook the garlic thai peppers and also marinate the shrimp in oyster sauce and put them in a mix of flour and other seasonings. When I fry them they come out golden red :) then I put them back in the pan with the garlic and chili's, serve it on a bed of chopped cabbage >

Thank you for answering my question! I made Tom Ka Gai (using a recipe from a different source on the internet) just a few hours ago and for the life of me, I couldn't figure out what was missing. It had all of the major components but was missing that depth and richness. I didn't want to reach for the cili paste just yet. At first, I thought maybe it was just one of those soups, like American minestrone or navy bean, which usually taste better the next day after the flavors have developed. But I now think it's related to 1) marinating the chicken in fish sauce and 2) pounding the lemongrass to release the oils, and 3) adding fish sauce and palm sugar toward the end. The recipe I used didn't call for the fish sauce or the sugar at all. So, thanks very much! One quick question: what about tomatoes? Sometimes I see them used, other times not. Personally I like them but was just curious why your recipe omitted them. And for what it's worth, I think your KZbin channel is great and your presentation skills are spot on. How people think they can openly criticize you or appraise your physical features like a piece of meat is disgusting. Looking forward to trying out more of your recipes!

+Rob Wuthenow Thank you for the last bit about how some people feel they have the right to treat her like a piece of meat. I get so furious sometimes I want to dive in and give them what for. (Perhaps being half Thai is a part of why I'm so offended. ) However, I've learnt that people like them need to be recognized and validated, so I just grit my teeth and move on. Bastards!!!!! Beautiful, this is one of my favorite soups but I am always going to this restaurant to eat it and I want to make at home. If I don't have galangal or can't find it is there anything else I can use instead?

@scruffy281 No it won't taste like fish, you're bang-on with the anchovy analogy. If you're afraid to use fish sauce, you can reduce the fish sauce by half and then add salt!

I was going to make your newer version, but I didn't have any fresh chicken stock on hand. Nevertheless, I noticed that the soup will not taste authentic or as delicious without the thai fish sauce. Thank you for sharing your recipes.

Hi Pailin, I wld like to make yr recipe but : - I do not have palm sugar, could I use normal sugar ? - is it compulsory to marinate the chicken is a fish sauce, could I skip it or could I marinate it with garlic ? - is it OK to reboil that soup ? sorry to bother you but I would like to impress my in law? awaiting your answer, tnx

I love to cook recipes from different countries and have a wine/cooking night ! So how did you like living in san fran when in school ? I lived down town for 2 years and worked at whole foods on California st & Vaness. I am from southern California so I liked San Fran for a little while but had to go back , ain't nothing like a warm beach lol. you think the kaffir leave chopped up would be good on my shrimp dish ? Hi Pai. Real stupid question for you. I am looking for the recipe for a really simple dish but delicious dish (it was actually a bowl) I once, late at night, after getting out of BKK airport. It was a clear soup with ground pork, rice and fresh herbs (cilantro?). I think it was called Ka tom moo, Krha Thom moo, or something like that. Do you happen to know what dish I am talking about and if so, do you have a video/recipe for it? All the best and happy new year.

Hi! Yup, I have a shrimp version on the channel, look up "Thai breakfast rice soup recipe" You can replace the shrimp with the ground pork mixture from my congee recipe.

I love this soup. Right this minute I'm making it with cod fillets instead of chicken. Problem is I can't get my herbs to come through in the flavor and it tends to taste mostly of lime juice. And I've been making Thai food at home for nearly 25 years. Next time, I'm afraid, I'm going to get a tom kha paste to put it as a base. But I'd rather not. Any ideas?

Trying increasing the amount of herbs, (oh and smell the herbs before you add them to make sure they're potent) and taste the soup before adding lime juice to see if you've got the right flavour.

PailinsKitchen Thanks, I'll do that next time. I let it simmer for a long time, until I could taste the herbs. I suppose that's another factor that influences the flavour.

Will this soup taste like fish in anyway? Or is it added for a little depth of flavor. Like when anchovies are used in Caesar salad ? I really love the flavors of all the ingredients you put in the broth but I am a little afraid of the fish sauce. I don't like fish at all. Loved the video by the way !!! Just subscribed! After ordering this soup at a thai restaurant I've been wanting to learn how to make it. The soup there was more red in color, which adds a nice warmth. Do you know what Im talking about? What is it. By the way, thanks for the video

This is my most favorite soup ever! However, I've tried making this so many times and it never comes out like how it tastes at all of the Thai restaurants that I've ate at! Usually they use regular white mushrooms and not oyster mushrooms. However, their mushrooms are always nice and white, but when I add mushrooms to my soup, they get dark and yucky. Also, the color, consistency and flavor in my soup is never the same as the restaurants! Their chicken is also really soft and moist. Do you know if their is something that needs to be done to the chicken first............like dredge it in corn starch or anything (besides soak in fish sauce because I do NOT like fish sauce)? Also, whenever I've added fish sauce to my soup, I can taste it and I do NOT like it so I don't add it anymore. I can't figure out why I just cannot make it like the Thai restaurants! I'm going to try your recipe and hopefully it tastes like what I've been longing for! Thanks! : )

+Anitra A You want to cook Thai food but hate fish sauce? And this is your favorite soup ever? Every single Thai dish contains fish sauce!!! You'll never get the same taste as the restaurants because they use fish sauce. I'm wondering how you can say you like any Thai dish whatsoever........

I am Thai and never really like fish sauce. I substitute fish sauce with soy sauce. Now, choose brands made in Southeast Asia like Yan Wal Yun, and everything is going to taste just fine. If you use Takumi's soy sauce which seems to be very popular in the US, the food is going to taste so Japanese. It is not going to taste right.
