Tomato Couscous with Capers:
1 (28 oz.) can diced tomatoes
1 1/2 cups uncooked whole wheat or regular couscous
2 tbsp olive oil
1/2 tsp salt
1 tsp oregano
1/4 tsp ground cloves (optional)
generous pinch of ground cayenne
2 tbsp small capers, drained (if using large capers, chop coarsely)
