Luncheon meat also known as spam is cooked meat sold in tins. They are not the healthiest food around but they are really convenient to be used in cooking. We grew up eating luncheon meat and we love the taste of it. In fact, it is one of our favourite comfort foods. If you cannot take pork, you can opt for chicken luncheon meat instead. Cooking fried rice is really easy, especially when you have a lot of leftover rice because you cooked too much of it. If you are craving for some fried rice but you don't have leftover rice available, simply cook a pot of rice as per normal then remove them from the pot and let them air dry for a few hours before using them to cook fried rice. Luncheon meat fried rice or spam fried rice is perfect when you only have spam, eggs and rice as well as some seasonings.

Luncheon Meat Fried Rice 午餐肉蛋炒饭 Spam Fried Rice
Ingredients:
3 - 4 pax

220g / 7.8oz luncheon meat (spam) - cut into bite-sized pieces
5 eggs (beaten)
4 bowls of cooked rice (cooked using 2 rice cups or 306g/10.8oz of raw jasmine rice)
220g / 7.8oz round cabbage (cut into strips)
2 tablespoons light soy sauce
2 tablespoons oyster sauce
2 tablespoons premium dark soy sauce
A few dashes of white pepper
2 stalks of spring onion (chopped)

I love your recipes. They are so straightforward and come with a clearly defined, coordinated number of ingredients. Maybe that's typical of Chinese cuisine. I'm not familiar with that. But other high cuisines like Italy are just like that. Thanks for the beautiful recipes

I add Rice wine on my when adding oyster sauce. Once dry enough I add regular dark soy sauce. Mix green onion and satisfy tummy. Never thought about adding white pepper. May have to try it and see how it taste.

I made it Cajun!!! With Smoked Turkey sausage ( removed casing ..no nitrates etc ) Chipotle mesquite seasoning scallions celery carrots cilantro etc. You can add fresh chopped tomatoes if. You like @ the end Thankx for the idea You made me hungry @ 11 pm. When I had no dinner earlier.🐉✳️💫

Your luncheon meat fried rice recipe is almost same as mine. Only thing I don't put oysters sauce and dark soya sauces. Iam using light soya sauces and Thai fish sauce.

You probably could. Dark soy is mainly used to enhance color. Instead of soy, I prefer chicken stock powder (I recommend knorr brand that's made in Thailand not China), as it enhances the flavor without adding any dark color.

Hi Felicia, you can omit the dark soy sauce if you don't have. Don't replace it with light soy sauce otherwise your rice will be too salty. Yes chicken stock powder recommended by @GM will help to make the fried rice even more yummy. Happy cooking!

The only thing I do differently is I use sesame oil instead of oyster sauce. It seems to give it a "restaurant" flavor.
