Coconut Cherry Raisin Hot Cross Buns
These are Super Soft & Addictive!!!
325 Deg F for 20 mins
Time to raise 60 mins then 40 mins for the balls.
This makes 12.
Knead for 8 mins until smooth.
Pan - 9x13
3 cups AP flour
1 cup warm whole milk
1/4 tsp salt
5 tbsp. melted butter
1 Large egg - optional no substitute needed
1 tsp coconut essence
1/3 cup sugar
2 1/2 tsp yeast
2 tbsp coconut milk powder
Pinch of yellow food coloring- optional
1/4 tsp nutmeg
1/4 tsp cinnamon
1/3 cup chopped cherries
1/4 cup raisins
1/3 cup shredded sweet coconut flakes

For the syrup-
2 tbsp water
3 tbsp sugar
boil until thick

Crosses-
1 cup icing sugar
2 tbsp coconut milk powder
1 tsp milk
1 tsp coconut essence

extra coconut flakes for topping

Thank you so much Rik for this recipe, i asked you about this weeks ago and you kept your promise to do these hotcross buns. My issue with mine was always the cross was too hard once bake as it was just flour & water, but your addition of oil is a great tip so i will be baking these today Brilliant 👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻

Idk what I'm doing wrong. Everytime I try to make buns they come out like small home made breads. Still soft, but not hops texture

This looks like a great recipe for to try, but I prefer a direct measurement for the flour, instead of pack cup!!!

Oh my deep breaths baking takes time to perfect however proofing my dough, oven temp too high and baking without love😊 was my issue. Take your time get all ingredients ready and try again. Practice makes progress. You've got this.

When you are kneading the flour don't go all in knead it with a very light touch when I say light I mean light touch it will take time but it will be as soft as butter

Looks so good I never had luck with cross bun always came out heavy and dense. But I will try this recipe and see how it goes. By the way what's the amount of flour in oz or grams. Thank you for always sharing your knowledge..

Hi guys and Natasha. I reqlly live this recipe but mine did not get brown on top and i didnt see u egg wash. Any tips to get it brown on top?

It didn't last 1 day in my home. because of the egg 2 days on your counter 1 week refrigerated.
