There is nothing better than a fresh yellowfin tuna, straight out of the water, on ice, cleaned and cooked... slightly cooked!!! The Orange Chipolte sauce over the seared tuna was as good as it possibly gets!!!! It really makes for an amazing day when you can go offshore, catch a beautiful fish and come back to the dock and enjoy it with friends!!!!
As for cleaning any fish, a well made, sharp fillet knife makes the work so much easier! check out the knife I use the most!

Seeing as they are in Florida, I wouldn’t be surprised if it was fresh. Florida is the Orange State (its nickname is the “Sunshine State” but more oranges are grown in Florida than anywhere else other than Brazil)

I just got back from Quepos about a month ago we landed 14 yellows. Took the meat right up to the Runaway Grill that afternoon. They did a great job on the dishes they made with the tuna. I cannot wait to go back next year.

Fresh doesn’t necessarily mean what you think. There’s 2 definitions like firstly it could mean that it’s fresh in the sense of straight from the source or fresh as in not expired. Hope this makes sense ☺️

To those who are complaining the fish is raw it's my suggestion to kindly watch Japanese sashimi videos. FYI seafood such as tuna can be eaten raw since the presence of harmful parasites in them is negligible.

You guys are talking bullshit. Fish parasites can definitely survive in humans and cause problems. Not all of them thats right, many die because they can't properly live in our bodies, but a few fish parsites definitely can live in our intenstines. Thats why fish that is eaten raw has to be frozen for a few days prior, to kill all parsites within it. In my opinion the people in the video put themselves at risk of parasitic contamination, because the fish wasn't frozen but eaten directly after catching and just lightly seared at the edges. the presence of harmful parasites isn't 'neglible' some freshly caught fish are literally RIDDLED with dozens of tiny parsites.

So check this out..... When cooking a pork tenderloin instead of tuna, make the exact same sauce, but instead of chipotle peppers, use Everglades rub. It's awesome! Makes a nice sweet and smokey sauce.

the best way to stop that lactic acid build-up is by using a method called 'Ikejime' to kill the fish. first, you take a metal spike and insert it into the fish's brain, making it brain dead. Then, you cut the gills, with one cut each. thirdly, make a cut just above the tail, cutting through the backbone, then, take a long, thin metal wire and insert it into the backbone of the fish, put it in and out several times. Finally, place the fish into a slurry of one part ice, and one part water. this improves the taste and allows the fish to be refrigerated for months at a time without having any fishy odor or taste. using this method allows the meat to create complex flavors. Basically, you can age the meat, similar to the way red meat ages.

Thanks for the great video, especially on how to filet Tuna! I wish I would have come across this video three weeks ago when we caught a 20 lb. Blackfin Tuna, here in the Gulf off-shore, mine didn't turn out so nice :-)

I only recently found out my seafood allergy (that I had for over 25 years) is finally gone! All about that fishing life now, but still haven't tried a lot of fish. Also, I couldn't help but to actually LOL when I saw everyone had a sunglasses tan :D

My doctor said that some people can just grow it out. There was a time when if I ate seafood my throat would shut and I'd break out in hives. I just ate fried fish a couple of days ago, and nothing. I did get tests done just to be sure, please don't take my word for it!

WeaponizedLizardMen you can have treatment to get the allergies out. My sister don't have any allergy but she got a few once wp she got older, now it's ok because of treatment
