What confuses me is that sometimes we see the character 们. But sometimes we don't. Yet we know plural is implied. So why isn't 们 there?

们 is only used for plural of people, and the only time是it’s required are 1. when we say the plural of pronouns: 我们，你们，他们，她们。2. When you address a group of people directly: 同学们…， 朋友们…

Hi, there! Thank you for your question, here, it is another grammar pattern. When you need to describe a compound expression (i.e. verb + noun such as 吃饭, 刮风, 唱歌, etc.), you need to separate 起来 and form a pattern like verb + 起 + noun + 来. (吃起饭来, 刮起风来, 唱起歌来). Therefore, in your case, 挺胸 is “stick out + chest”(i.e. chest up), it should be 挺+起+胸+来 rather than 挺胸起来 or 挺起来胸.

so in this sentence 宝莲灯看起来像莲花一样，它一发光，就有了强大的力量，。。。we have 看起来(to seem) 像(to resemble) + 一样(same), which are verb + complement + verb ... + adjective. correct??

I would actually consider 像……一样 as a whole. It's a pattern that means "similar to..." Technically, 看起来 and 像……一样 seem redundant, but that is not really a problem in the Chinese language. In Chinese, we often see patterns that are considered redundant in the Western eyes, such as 因为……所以……，虽然……但是…… etc
