Do you season a stainless steel wok the same way you would season a carbon steel wok...Thanks..Great recipe
@ukchinesetakeawayrecipesbyalex3 жыл бұрын
Cheers Steve,yeah it needs seasoned,cooking on just a plain steel surface is really not great for Chinese..Takeaways all use carbon steel,my thinking is they are easier to season thanks Steve.

I've seen a few variations you posted of the salt and chilli seasoning, is this a new version? I usually make the one from your Glasgow famous salt and chilli chips vid. Is this better?

@@ukchinesetakeawayrecipesbyalex yes watched the video looks great. I was trying to buy the book earlier and it wouldn't let me proceed without a uk postcode and phone number(I'm in Ireland) so I couldn't purchase it. Ill have better look when I get a chance. Do you need to have a proper phone to receive the book or anything? Maybe I can just make one up.

I'd probably get away with using a cinnamon stick rather than bark, saves me money as well haha. Need to give these two oils a go and this new seasoning mix looks VERY promising. Will have to order some 13 spice online. I'd presume you learned recently about 13 spice from some Chinese cooks down the local takeaway? Love this recipe though looks super tasty.
@ukchinesetakeawayrecipesbyalex3 жыл бұрын
Aww cheers mate i appreciate that and great to have you onboard..All the takeaway's i've worked in over the years all use the 13 spice mix..Everything you see in the above recipe is in this behind the scenes video i shot a while back..kzbin.info/www/bejne/ZnPanYd5nq-AatE...I have many on my channel..The chefs over the years have been really helpful otherwise most would've been just guess work..The way i see it it's best coming from the horses mouth,.Too me it's the only way to learn and i've learned loads and the best part is sharing it with others.Having access to Chinese kitchens is not easy but i got lucky and have made many friends along the way. Cheers pal.
@ukchinesetakeawayrecipesbyalex3 жыл бұрын
I meant to say the cinnamon stick will work just aswell.Bark is a lot stronger but to be honest i don't think you will find much of a difference..Both are cinnamon or sometimes called casia so really you won't miss out..
@feelinwoozy3 жыл бұрын
@@ukchinesetakeawayrecipesbyalex brilliant Alex, you're a lucky man getting into those kitchens haha. Need to brush up on some recipes for summer to entertain guests and no better dish to start with. I should also ask it looked like you added the hot oil to the chilli flakes am I correct in saying that? Thanks a million.
