I made the taquitos today! They are SO good & the way the filling is seasoned makes them taste just like the real thing. My husband, (who is meat-&-potatoes-country as they come) took one bite & said, “yeah babe, we can eat these any time.” Nicole, I appreciate you expressing your love of the taste, textures, & feelings that food gives you. It is helping me with my guilt I associate with eating things I like. I also love how intentional you are with your time & energy & enjoyment of cooking. Thank you 🤍

I’m glad your husband liked the taquitos and I understand the guilty feelings you described. I’ve struggled with that too and still do from time to time to be honest. I don’t think it’s something that you get over as much as manage in a mindful and healthy way as much as possible. When I feel myself feeling that way I try to become aware of it without judging myself and then I try switch my thinking to almost a like my own parent…lovingly nourishing myself with good food that energizes AND delights because that’s what I want for the people I love so I try to treat myself like that too. Budget tip if you get a cheap brand of corn tortillas such as Guerrero or first street it's like $3 for a pack of 80 and wholesome ingredients (just corn masa, which is considered a whole grain)

Thank you and Happy holidays to you too 😊❤️ I hope you enjoy this recipe! The taquitos freeze well too. I recently made extra, baked them for slightly less time then let taquitos cool completely. Then I just wrapped them up and put them un the freezer so I have an easy meal ready to go. To reheat just bake or air fry until warmed through and crispy 🤗

It's necessary for the queso but you could technically leave it out of the spinach artichoke dip. It won't have the same umami quality but you could add more parm cheese in it's place and it should taste great! 😊😊 Let me know what you think!

I'm feeling so emotionally drained from the conversation I had with my counselor today. She says its rude for me to host a party and only serve vegan food. No matter how much I tried to explain my moral stance. She kept saying it was selfish of me/vegans to put our feelings regarding animal products in front of the comfort of party guests. She said if I really self reflected I'd realize my stance doesn't really have anything to do with the animals and is all about me. Am I going crazy? Am I the only vegan who wouldn't serve animal products at my party?

Get a new counselor 💚 if you’re hosting something, then you make the rules. And if your friends and family don’t respect your morals, it’s probably time for new friends and better boundaries with family.

@@marissapayne2635 Unfortunately I'm not sure I have a choice in my counselor. The ABA office chose her for me and I have a feeling their other counselors would say the same thing. I have autism. I need the help of these services in order to learn how to live independently and in other areas of my life she has helped with that tremendously. But yeah, even my meat eating mom was very off put by the conversation, calling her forceful and unrealistic
