One of the "tricks" w/ banh mi is to tear out a bit of the insider of the bread to create a cavity. It makes for a better filling-to-bread ratio. You'll see most other banh mi videos do this.

Yes. I usually do this when I make them for myself. But when I serve them at my winery, I don’t like to rip apart the customer’s bread.

My family fled Vietnam during the war. Thank you for doing justice to our culture and cuisine and not another "white" version. I can't stand it when I order vegan pho and they have broccoli and cauliflower in it. No. That is not pho. Bonus points for getting the name right too. Subscribed and will attempt to make this soon. The pate was always missing from all other banh mi recipes but this looks amazing!

I'll definitely check out your baguette recipe, I love making bread, but baguette is one I haven't made before. I absolutely love banh mi sandwiches. The pickled veggies are everything!

Looks so good! Any recommendations for a soy curl substitute? We don't get them here in New Zealand 😓

Any vegan chicken substitute like TVP would work here if you want to season it with ginger lemongrass or the like. If you make seitan, that would be great sliced thin and seasoned similarly. I’m actually experimenting with using my washed flour seitan for this now and I thin it is going to work great. Just slice thin instead of shredding and sauté in a own with the same seasonings I mention her for the soy curls.

You could just use carrots. But if you want you can look fir any kind of radish. A very mild turnip would also be ok. Maybe jicama? I haven’t tried that.

What tool do you use to shred the daikon/carrot?

I used my OXO mandolin to make the shreds. But you can do it by hand if you cut into thin slices, then julienne with a knife. You can use a box grater too, but I like the shreds to be a little bit thicker than that.
