Vegan Gluten Free Blueberry Muffins

Vegan Gluten Free Blueberry Muffins
Ingredients
2 cups gluten free flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsweetened non dairy milk
1/3 cup non dairy yogurt
1/4 cup vegetable oil
1 teaspoon lemon juice
2 teaspoons vanilla extract
1 1/4 cups blueberries( fresh or frozen)
1 tablespoon gluten free flour
Directions
Preheat oven 425°
Grease muffin tin
In large bowl whisk together flour , sugar, baking powder and salt
In separate bowl whisk together the milk, yogurt, oil,lemon juice and vanilla
In small bowl mix the 1 tablespoon of gluten free flour with blueberries
Pour wet ingredients into dry ingredients and stir until combined
Add 2/3 of blueberries and gently fold
Place batter into muffin tin
Place reserved blueberries over the top of each muffin
Bake for 5 minutes then turn oven down to 375° and bake another 16 minutes or until toothpick inserted in the center comes out clean
Leave to cool 5 minutes then remove muffins onto cooling rack
