We are leaving Tuscany and its ribollita behind and we are traveling to Valtellina: here are my vegan Pizzoccheri, a traditional dish from north of Italy. It consists of buckwheat pasta cooked with veggies and topped with cheese, a lot of cheese, vegan cheese in my case of course.
