I make then for my sister because she is vegan and now I am not aloud out of the kitchen. She adores them all my family does, love the taste and the texture of them.

I just made these, Holy Moly, soooo good! I used spelt flour instead of white, and they came out amazing! Eddie loves them too! Will be making more of these for sure!

My dough wasn't very crumbly but it still worked nonetheless! I really like this recipe and it is very simple without complicated ingredients, I'll probably do it again

Hello! My finger tips and tung are burned as I couldnt resist to try them as soon as they were cooked! Even tho I havent got most of the ingrediens (I've used white sugar instead of brown, quite runny agave cyrup, no baking soda, istead of coconut oil I have used vegetable oil... ) it is still soooo good!! Im having it with almond milk. Yum! Thank you! :) oh, and it took me like 15min total! :)

If you want an easier alternative to the zesting, I suggest a life-changing tool: a hand held microplane! It is also amazing for grating ginger and garlic!

Keep up the good work :)! Oh, by the way do you think that one can substitute margarine with coconut oil always in any recipe and in a ratio 1:1?

Thank you, dearie. That's so very sweet of you to say. As for margarine and coconut oil, the 1:1 doesn't always work. Margerine is a combination of oil, water, and emulsifiers so it does act a bit different in recipes. In this recipe, it can cause the cookies to spread out a bit more. I actually like them better this way, but know that it's not always easy to get vegan margarine so I shared this recipe with coconut oil. I hope that answers your question. :-)

Thanks, dearie! Golden syrup is usually in the baking section of regular grocery stores. You can also use corn syrup, brown rice syrup (add a little more sugar for this one), or thick agave syrup.

Lulus Dreamtown Short answer: I don't know. (^.^) The only time I tried using applesauce instead of oil was for carrot cake and that didn't taste so nice. You can definitely use whole wheat flour though but you need to reduce the amount by about 1/4 cup. Thanks for the kind comment, dear. :-)

Stef, I realize that you're unlikely to see this, but just in case: If you use applesauce or anything else that isn't a fat, the texture will be be off -- like a dense cake rather than like shortbread or pleasantly crumbly cookies, and possibly a little gummy.

Followed along but my batter wasnt crumbly at all. Dont know what went wrong. Tried baking anyways and ended up with flat crispy pucks XD Sticking the dough in the fridge for a little to see if that works.

Sounds like too much liquid/not enough flour. Probably need to double-check that you've measured everything correctly and used room temperature coconut oil or vegan margarine (semi-solid, soft but not liquid). Good luck! I hope those flat crispy pucks still tasted good...or else crumble them into ice cream!

Mary, I know that your approach might be different today, but just in case this is of use, I'm gently noting that if you had dumped the dry into the wet (1/3 or 1/4 at a time), then you wdn't have lost any of the wet ingredients. Best wishes.
