After about two hours in oh ya I had the ribs in a foil boat with beer 🍺 for moisture, then I opened the fridge and found this big jar of salsa, sorry 😢 store bought. But still good , so I smothered my ribs with the salsa , few hours later ! Best ribs ever! Thanks again!!!

Beautiful description of a typical hispanic kitchen. Molcajete style has a different flavor because ingredients are mashed, and not cut. Brings out more flavor and natural sweetness. Very impressive.

I made your salsa recipe and sent it over. That night I got a call from her boyfriend. "um I have a question, are you sure you don't have any Mexican in you?" I've been making and canning my own salsa for 20 years. Actually since I was in high school I got obsessed with it because I didn't like onion in my Salsa and the only way I could have salsa without onion was to make my own. Then I started learning how to can it to preserve it. I've never done a mortar and pestle Style salsa and I'm really excited to try it. Thank you

I'm actually going to try that way. I'm Romanian and I have in my kitchen what we call a mojar which looks quite similar to the molcajaete and we usually use it for grinding garlic and making sauce because, as you say, it makes a certain flavor come out. It's funny because I have that in my kitchen but I will have to go to a big supermarket to find a jalapeno as we have different types of hot peppers here. haha

Ok, I just did this recipe. I had to combine both methods. Used an iron frying pan to dry cook the onions and garlic. Worked out ok. Boiled the tomato and jalapeno pepper, rather blanched the tomatoes, but the jalapeno ended up in the frying pan, then everything in the blender with a bit of salt and chopped up some cilantro from the garden. Definitely a different kind of salsa taste, really authentic. Love it. Just put it in the fridge. Will head out and get some chips to have with dinner tonight. Thank you for sharing this recipe. Thank you for the wonderful recipe! I need to get a molcajete! The better flavor from them comes because bruising an herb or vegetable does a better job of extracting aromatic flavors than chopping them, because it sort of smashes open all of the plant cells instead of only cutting open the ones that happen to be under the edge of the knife. Sometimes people will bruise herbs like mint or basil by sort of slapping them before using them, which works the same way.
@joeb41423 жыл бұрын
I always crush my Mexican oregano between my fingers before using it. I thought crushing was to enhance the aromatic properties but I see that it also enhances flavour.

Oh My God!! Thank you for the recipes! I used the Recipe #1 Molcajete and now have a new favorite salsa recipe!!! :) I used 1 teaspoon salt for 16oz of tomatoes by weight. Mine was a little runny, but it's because of the tomato you use. I just used a huge beefsteak. Ideally, Roma or a House tomato with less liquid should be used if you want it less runny and more thick. I don't have a Molcajete (will be purchasing one, long overdue), so used a fork and potato masher! Works in a pinch. For onion for this batch, I put in 2 Tablespoons. For Cilantro, probably 1 Tablespoon minced. Thanks again!!! :)
