UDON!! A hot bowl of noddles in Tokyo always hits the spot on a cold day. Instead of ramen, let's go for UDON, which is both healthier (don't eat too much tempura!) and more fun to eat. In this episode, John travels from Tokyo to Kagawa Prefecture and the Sakuki region for handmade bowls of udon noodles and soup. Let's explore the kitchen, watch them cook and serve like pros -- and of course EAT, EAT and EAT!
What makes UDON better than RAMEN?
★ It's healthier. The soup is not as oily.
★ The noodles are thicker.
★ It's cheaper!
★ Tempura!! Pick your side dishes.
★ It tastes great cold (bukkake udon) perfect for summer.
★ Customize it any way you like in the self-serve style.
How to Make Udon (Sanuki Style):
INGREDIENTS
 Wheat Flour / 500g
 Salt / 15g
 Water / 240cc or 1 cup
(makes 3-4 Servings)
- Mix and knead the dough.
- Make a ball and roll it out and fold it several time.
- Roll it to about a 4mm thickness.
- Cut into strips of the same thinckness. It will expand in water.
- Flour the noodles and add to boiling water then lower heat for 10-15 minutes. Stir the noodles.
- Add dashi (fish stock stock), ginger and negi -- and your favorite tempura! Chikuwa is the most popular.

It's not fear that makes them shorter, it's the time to make it and get it out to you. I have been letting them go longer though :) but I should probably make the shows a little tighter. It's hard to edit yourself -- I want to keep EVERYTHING in but I'm getting better at seeing the content more objectively. -john

Maybe someday you could make a "lost footage" or "bloopers" video series where you use some of the footage from the past that you didn't want to include in your standard episodes. I absolutely love this restaurant. It's so relaxed, so informal. Getting to go back into the kitchen that way, picking your ingredients - It's like going to your grandmother's house for dinner. This is what family pride looks like. Fabulous. I would love to find a place like that here in the States. Thanks for including us, John.

She was the star! Loved talking with her. She refused my money when I wanted to pay -- called me her guest. I was surprised a lot of foreign tourists are finding this spot too. It must be in some guide books. She has been learning English to try to communicate and it makes the experience so much more fun. Thanks for watching it!! -john

my grandmother is from Japan and really miss it from living and visiting it there when she was younger, now that she's older she can't travel on airplanes and miss Japan so much we watch your videos and she loves it. they have bonded us closer and closer thank you!! you should do a vlog

At 8:36, when Miyagawa-San is asked why her Udon is SO good, she replies it is because of the "pure water and the shop's old lady is a real beauty ". The truth is, Miyagawa-San is telling the ABSOLUTE truth. She is lovely, hard-working, with obviously, a fantastic sense of humor !!!! I would go to Japan JUST to meet this fantastic woman !!! I just wish John would take the time to explain the difference between the yen & the dollar. Or explain what some of the dishes are made from. Are the soft drinks comparable to the USA's soft drinks? You know, kind of going BEHIND the camera, so to speak !!

Oh wow you certainly have me craving Udon now. gosh I wish all the great Udon shops were closer to me T _ T I love eating Udon and sometimes I make my own Udon with stir fry and miso soup(it's hard to find the noodles here where I live. The shop doesn't always have them in stock). The best Udon I have ever had was in Little Tokyo, Hollywood, California. Wishing I lived closer so I could get my Udon fix lol.

Another thing about udon is that it’s really easy to make. I’m trying to live zero waste but i love udon and they all come in plastic packages. So I tried to make it from scratch. It takes less time than going to to store to buy it and you only need normal plain flour, salt, and water.

the first time i tried udon i don't like it. it was given to me as a side dish to my pork cutlet bowl. the soup doesn't have a taste and it didn't compliment with the udon noodles so i don't really like it. the second time, it was pretty good but we just ate at an izakaya. i'm so full cos i ate a lot and drank a lot. i was force by my brother-in-law to eat even though i absolutely wanted to puke everything i ate at the izakaya, so, even though the udon on that shop is quite really good i didn't enjoyed it. from that night on i swear not to eat udon ever again, i'm scarred for life. but thanks to this video i want to give it a shot again. thank you for sharing this!!

They don't have to keep tab. No one deceives them. 95% of the people who eat here at regulars. They order nearly the same thing and pay the same each time. You could obviously pay less but then you'd have to live with the guilt of ripping off an honest business owner. In Japan, guilt is the most powerful deterrent. See the "Vending Machine Restaurant" video I did 7 months ago :) -john

In ace attorney: spirit of justice, there is a case involving soba and udon. Thanks to this video I already knew what they meant when they talked about udon. :D Though now I'm confused about what's the difference between udon and soba. If you ever get the chance to make a video explaining soba, that would be very helpful and interesting.

i was there many times i don,t like there food, some of them are ok, but i like more china korea, they got best food, i was kobe for more than 2 years, very nice peoples,
