I love the feel to this video, dispelling the stuffy chef personas. Yoya filleting the fish with the huge chef knife just like Taku. No, you have to have filet knife to fillet fish- if you know what your doing you can do it with any sharp knife. A true chef cook with what he has, not what the rules someone made up says. Great video and as American as apple pie, a bunch of cool guys cooking up some good food. The Japanese community deserves our respect as a great addition to the American melting pot- or matsutaki rice pot. Mmmm looks so good…
