Hi Rose, I can read Vietnamese and the banana rice roll package that you showed, you're supposed to grill it or put it in the oven to get the best taste, not microwave 😂 Maybe that's why you didn't enjoy it so much but I swear if you ever taste it freshly made off the grill, you will be HOOKED

Basically, this dish is banana wrapped by sticky rice, so the sticky rice part should be grilled until the outside layer is brown and crunchy, which means it's been cooked. I highly recommend eating the banana rice roll with coconut milk, Idk why but the coconut milk gives a big kick for the banana one : D

This is how I cook too, I follow a recipe 2-3 times a week and then think of all the random mix-togethers for various parts of leftovers, since my fiance never eats leftovers as-is. Some of my best meals are repurposed leftovers!

It's a spirit bear! Which is actually just an albino black bear. It's the official animal of BC and I'm so jealous that you got to see one!! I see tons of black bears but no spirit bears

youre right mate, wraps are awesome. they are the BEST way to use up leftovers! Dozen even matta WHAT you put in them, they always taste great. Stop apologising Rose for the randomness of these meals, and the mish-mash of different delights & leftovers! i actually find it way more interesting than normal recipe vids! ~ but thats probably cos u are AMAZING how u put stuff together and it comes out looking like a balanced and pre-planned meal! I like that you just use a veggie peeler to make zoodles instead of a spiralizer. I find spiralizers take up a lot of space. Sure the zoodles don’t look as perfect but it doesn’t really matter! :)

Weirdly I have been raiding my freezer mostly for veggie mixes to stir-fry and having it with rice or air-fried potatoes My freezer is so full - when we were in lockdown I bought more and we haven't had visitors for over 15 months so things I often made got frozen too. I have enough frozen tofu and tempeh to feed a small army LOL

I think that was a blonde black bear. They are pretty rare. You can tell it's not a grizzly because of the more slender head with less prominent brow, prominent ears, and less distinguished shoulder hump.

2:04 Yes, lemon juice (or more precisely vitamin C ) helps with iron absorption BUT only if you don't destroy it with heat :D So here it was definitely a flavour enhancer :D Some red peppers (packed with vit. C and super crunchy) would be an awesome addition to really boost the iron absorption!

Does any of you also experience severe bloating when eating vegan foods? I like to eat vegan, but my stomach does not agree with almost anything...lentils, chickpeas, beans, mushrooms, broccoli...everything makes me super bloated :)) Does anyone have any tips for this issue?

It's very common when first starting to transition to a plant based diet to experience a good amount of bloating, and it doesn't mean your body can't tolerate them in the long run. Essentially your gut biome is optimized for your current diet, and when you introduce these new foods, especially in larger quantities, your gut flora/fauna populations are inefficient at aiding with the digestion of them and produce a lot of gas as they try. If you want to avoid this and are in a transition phase anyways, I'd try to identify which foods are the biggest offenders, and gradually introduce them in larger and larger quantities over time. Dial in the amount of these foods you can eat before you start feeling uncomfortable, and eat that amount for a few days. After a few days, introduce a little more, and then a little more, and repeat until you feel comfortable eating the amount you want to eat. As you do this, the populations of bacteria in your GI tract will change from the ones that were efficient at dealing with your old diet, and shift to populations of bacteria more suited to your spiffy new plant based diet. After this you should be good to go! It doesn't take as long as it sounds, but it could take several weeks realistically.

The first comment said it all, but it also helps when you use canned chickpeas, lentils or beans to wash them propperly under water. It also reduces the bloating.

Bloating usually occurs for two reasons when switching to veg, a) increase in fiber and b) increase in raw produce. Try cooking the majority of your vegetables until your stomach and GI tract is more used to them. Then you should eventually aim to have 50% of your daily veggies raw because the more raw veggies you have the better the bioavailability :) Also when you increase your fiber you need to also increase your water intake so make sure you're doing this by drinking enough water and eating water rich foods!
