You can cook chickpeas or lentils in advance they last several days. Them toast chickpeas in herbs and cumin in advance for a meaty taste on flourless Ezekiel bread with sliced tomatoes and avocado. Lemon or lime for zest. My favorite is sautéed lentil and brown rice for breakfast as all essential amino acids are present when combined and carbs for energy -and lentils are great to balance hormones. Again you can prepare the legumes several days ahead to meal prep. What is your first language? 🙂

We should be going to you for recipes ♥️ Vinegar dishes like your pickled cabbage or shepherd salad, the vinegar and lemon reduces glucose and insulin about 30% eating with rice/starch. Intermittent fasting has fixed my glucose and insulin issues-I only are two meals for 3-6 months and enjoy carbs like I couldn’t before. Wish you best on this journey 🇹🇷

Any type of egg dish (scrambled, omlette, boiled the night before) is great! I have a rice with a marinated egg on top. You could also premake breakfast wraps or frittatas in the freezer and defrost them. There’s a lot of toast toppings you could try too!

It’s her choice is she wants to become vegan. You can’t control her to do something she doesn’t want to do. She still gets protein from nuts, seeds and tofu in her diet and eats lots of fruit and vegetables. Please don’t comment on her diet, it’s rude.
