I’ve never tried cheddar in apple pie, im not sure i’d like it😅 I did grow up with apples and cheddar cold tho! Its so yummy and reminds me cheese goes with a lot of sweet things (unmelted imo though. I think with cheese becoming more salty as it melts it changes the flavor profile and isn’t as good. But again, just my opinion🧡)

Maybe something with cream, vanilla, spices, and either hard cider or non-alcoholic cider and (spiced?) rum? After some googling, curdling may be a problem, but not necessarily an unavoidable one?
