Most of the receipes are instant which are made fluffy by adding eno Or baking soda etc but your receipes have essence, no sense in eating dosa Or idly if batter is not fermented, thank you so much for showing us the receipe

The reason I used whole wheat is to teach that once the berry is ground and fermented, the fermentation helps to break down the gluten which will help in better digestion of wheat that being said I have not tried with wheat flour. Hope this helps.

Nisa, Please throw some clarity on this: Polymerized oil on top of a cast iron cookware is a plastic like coating. Is it bad for health? Is this debatable? I have always heard this - cast iron cooking is healthy!! But the term polymerization frightens me

I too had this worry. I've read up a bit. So once the oil has formed a polymerised coating it is not harmful . But while the oil is heating to form it it is not safe. So once the coating is created, wash it with hot water and then use for food. That's as far as I have gathered. Teflon coating cannot take high temps while this apparently can
