Not to discount his abilities as a comic, but all talk shows are pre-planned and usually rehearsed. If you want a good example of this look up "Conan Steve Martin scraps" on KZbin. You'll see how they do a quick run through of a segment well before they record the actual interview. Pretty much all talk shows follow this setup. Practically speaking putting on a big show like this has a lot of moving parts and it's too expensive to pay everyone there for hours to get enough usable improvised material for a televised interview.
