Hi Laurie,. When I want to freeze mashed potatoes,I add cream cheese and butter while mashing. Then I spread out on to a parchment covered cookie sheet. Then I score the top in individual servings. And freeze. After frozen I take and break apart the servings .and usually vacuum seal or I put in sandwich bags. Works wonderfully.

My dad would keep bread bags and in the winter he would put socks on us then bread bags then socks and boots it worked we never had wet feet I use them on wet paint brushes and Luke you freezing 😊😊

Another good way to preserve chopped onions, spread them on parchment paper (lightly sprayed with oil) and flash freeze for 4-6 hours until frozen solid, then bag them up. They will be loose and easy to get out of freezer bag without having to beat them loose.

I have been freezing mashed potatoes for some time also. So very handy. I am having shoulder surgery next week so will get a bag of them made up and cut some and blanch for potato wedges in the Air Fryer. The more I can get done the easier it will be for us when my husband is helping me with the meals for 4 months. God's blessings.......🥰🥰🥰

You can flash freeze your onion slices also and then put in the bag. That way they aren't frozen together. 🥰🥰

To get the most air out of a zip lock bag, get one of those tiny coffee stir stick straws, stick it down in the edge of your freezer bag, zip it up pressing out as much air as you can then suck the remaining air out with the straw, pull it out and zip the last bit closed.

Great attitude! I use bread bags for things, now that groceries store plastic bags are no longer available. I was a fan of Vidalia onions since I lived in Glenville Georgia many years ago. However, they now grow a variety that makes me gag. Literally. Vidalia onions are not a variety, they are simply sweet onions grown in the Vidalia area. I miss the originals. I've watched a few of your videos and wondered why you put up things that normally store well through the winter. I deduced that you don't have a basement. That makes sense because where I lived in Georgia, the places did not have a basement. Your videos are very helpful for people in that situation! We recently took out our frozen black raspberries and red raspberries to make wine. We needed freezer space with the harvests coming in. With berries, one needs to pick and freeze, pick and freeze until there is enough to do something with. I never had jarred potatoes, but I don't like jarred corn, so I can kind of relate. However, jarred beans are a favorite. You can preserve some veggies, like carrots and parsnips, in damp coco coir or sand in a large tote in a garage.

I have bought frozen onions in our local bulk food store but was in larger quantities and it's hard to get them apart. I often make larger amount of mashed potatoes so I can freeze several meals. Interesting you said you are so busy and I hear that from people who have retired. The case is the same with me. We find lots to do and it's all good. Hey Ms. Lori, I have RA also and my hands were like yours. It’s so painful. I don’t take the meds from Dr because it destroys my immune system. I decided to try Qnol turmeric gummies. It took until my 2nd bottle but I kid you not, my hands are flexible again and the pain is almost entirely gone. The gummies taste good and I just take two a day. I can close my hands now pain free. I just wanted to share that with you in case you wanted to try them. All natural with no side effects. Don’t give up on them but give it one whole bottle. I pray they work for you also. We had to make a trip to Florida for my husbands aunt , and driving through Alabama they were selling peaches 🍑 on the side of the road 2 weeks ago , he said they were from Georgia the best peaches we ever ate . I wish I had bought more . Next yr God willing,Im gonna order from the Peach 🍑 Truck they come through here 3x this summer but we didnt order , The bread bag idea- My grandmother always used her's also & Ive always saved mine ,but we havent bought a loaf of bread since last November 2023 ,due to Doug being diagnosed with diabetes. I absolutely love Vidalia onions. When they are in season, I buy them from Costco. I usually get about 20 lbs of them and do the same thing with them as you are doing now. I made onion broth with the scraps. Waste not, want not!

I’m 74 and I thought I was the thrifty one, but as usual I’ve learned from you once again! I never knew you could freeze mashed potatoes. I immediately went to my frig and got out a Bob Evans loaded mashed potato tray and checked the expiration date and it was still in date so I put it in the freezer! When you live alone but still love food you put things up for a later day!Love you and still praying for your health needs!

Once a year I make about 12 to 15 gallon size bags of beef vegetable soup. I make a huge mess and it’s a three day process, but it gives me enough homemade soup for the entire year to get out of the freezer when I want a pot of soup. The potatoes and other vegetables in the soup hold up really well. They do not get mealy.

To fry the hash brown patties, I would just spray them with a little oil and salt and pepper, then put them in the air fryer. I love frozen hash brown patties. I think the first time I made them was almost 40 years ago, when my Dad brought me 100 pounds of potatoes one year…lol. Lasted all 6 of us all winter, and then some .

Here in the northwest onions are selling at the stores for nearly 3.00 a pound and eggs are going for 4.00 for 12. Very costly when you have no way to garden. Last time I bought meat was last March. Just too costly and too risky. I am so glad you all are so blessed. I threw out my TV and only keep aware of the weather on AccuWeather app on my phone, and only once in a while see news headlines... Keeps life very positive. Made a huge difference. I follow fire and storm maps to stay prepared.

We love you and Mr Brown! This may have been mentioned but I use the little silicone muffin or bread trays for bacon grease. Then I can freeze individual servings to use as I cook :) ❤

Wow, you taught me so many food tricks tonight. Freezing your potatoes. Freezing onions, peaches, and bananas. Over here in our state, we don't get any good peaches unless you go to a fresh farm market. I have never heard about the banana peeling trick for adding to your plants. What a great idea, and thank you for sharing. I just love you to pieces. When you cover your bananas with water and store them for a week, do you keep that mixture in your refrigerator or out on the counter at room temperature?

I chop up onions and freeze on baking sheets. With parchment paper and freeze flat. When frozen place in bags and they didn't stick together. Great for cooking. Want to try freezing potatoes.

Thanks for sharing. Going to make some fries and hash browns for the freezer. Saving those bread bags and the way you tied it up reminded me of my Mom. She saved the bread bags and ties, pie tins, the trays from hamburger meat, etc. she saved everything and had a use for it all. Peach cobbler sounds so good. I can’t wait to see you make it.
