I had just tried making this bread, it turn out so soft and taste good. I add raisin to one portion of dough and the other portion remain plain, excellent recipe. Thank u for sharing this wonderful recipe.

I did the same thing ad you Iris but the plain one raise high than the raisin. Is that normal?

@@bessieyee3209 today my bread a bit dry, but still soft. Maybe I use tangzhong method with same recipe to make the bread to prevent the bread to become dry the next day. Hope it work.

Hi, Apron. 1. At 6:27 What is the purpose of folding the dough during shaping (after 15min rest)? Does it make the texture of the bread more layerous? 2. I'd like to know if there's a need to spray a little water on the surface of the dough before baking. Does spraying water help the dough the grow higher during baking? Thank you so much.

Hi, the purpose of folding the dough is to shape it. Spraying water on the dough surface before baking helps the dough surface to be crispy.

Hi Apron, what is the difference between your shaping method and the traditional way of just rolling into a log and then bake? That is without the 15mins rest and the double folding?

I economized on this recipe. Used 3g instant yeast and water instead of milk. Increased butter to 10% of flour's weight and increased salt to 7g. The butter flavour stands out more.
