I made croissants once. The actual technique wasn’t too difficult (expect for the yeast cause that’s always a challenge) the real difficulty was the waiting. I started at like 7:30 am and my croissants weren’t done till after 9 pm. You had to carefully time how long they spent in the fridge and I really couldn’t go anywhere that day for more than an hour cause I kept having to come back and fold.

In vienna, they hated the ottomans because they sieged their city so they made a pastry shaped like a crescent moon, symbol of the ottomans. A french man found crescent pastries in Austria and started making them at a café in France, he renamed them to Croissants

That's wrong you probably heard that from youtube and didn't take the time to do research on the subject, yes kipferl is an austrian pastry and yes french bakers liked the idea and took inspiration from the shape but it's totally not the same thing, kipferl is made with a brioche dough whereas croissants are made like in the video so croissants are indeed french

A bit of history of the croissant. The croissant we know dates back many years ago in Austria, where it was known as the kipferl, being sold in Viennese bakeries. Instead of the crescent laminated(folded with butter) dough that the modern croissant uses, kipferls used a brioche dough. Then, in the early 20th century, an Austrian man opened up a viennoiserie in France. French bakers noted their popularity and created their own version, replacing the brioche dough with the aforementioned crescent-laminated dough. They are likely called Croissants due to their crescent moon shape. The details are kind of rough and may be incorrect as I am only going off what I remember when I did my presentation on the history of certain French pastries/desserts, so feel free to correct.

I’ve been making croissants for 2 months now. Doesn’t sound like a lot of time until you see how many I’ve made, how many types of butter, milk to water ratio, sugar to yeast ratio and yeast I’ve tried on all of the croissants I made. The word “Croissant” itself came from “Crescent” which describes the crescent shape of the moon. The folding technique is called “lamination” which is not as hard as you might think if you have a fridge. Those who rush will definitely ruin their croissant. Trust me, you have no idea how many I’ve failed. Those who let proof for too long failed and those who under proof it gives an uncooked dough and a pool of butter. The standard lamination fold is 6 folds but most people goes for 3-4 folds. Which is more than enough but traditionally, it should be 6 folds. There’s this thing called a “dough sheeter” which gives you a more even stretch across your croissant at the end, but those who still do it by hand knows that it doesn’t matter whether you get a flat top stretch on your dough, what matter is the evenness on the sides. For those who are looking to make croissants, it’s not just flour, water and sugar. Yeast is essential as well for the final proof. If you use too much yeast, you get a funky smell that ruins your croissants. Without milk, you’ll get an almost tasteless croissant. Without the butter it would improve the flavor and croissants wouldn’t be possible. But it’d be best if you just try making the yourself. Fail as much as possible and see why you failed to make them and improve on it. And please don’t use a sour dough starter to make your croissant. At the very least, use some antibiotic for lactobacillus and raise the condition to be slightly acidic(pH of 4-6) grow your yeast and then extract them. Acidity can mess with your butter.
