LEARN HOW TO MAKE A STEWPENDOUS WARM VEGETABLE STEW RECIPE TODAY!
LAY HO MA (how's it going in Cantonese)! Winter for me is all about keeping cozy with deliciously warm recipes. Join me in this episode and learn how to make a thick, rich, and umami packed veggie stew recipe that will show winter who's boss! Let's begin
Ingredients:
1 red onion
3 pieces garlic
2 carrots
3 celery stalks
3 russet potatoes
200g king oyster mushrooms
2 plantbased sausages
2 tomatoes
2+2 tbsp avocado oil
2 tbsp tomato paste
few sprigs of thyme
1 cup red wine
1 cup frozen peas
5 cups vegetable stock
1 1/2 tbsp soy sauce
1 tsp dark soy sauce
chopped parsley to garnish
Directions:
1. Dice the red onion and finely chop the garlic. Chop the carrots into large bite sized pieces and finely chop the celery.
2. Chop the russet potatoes into large bite sized cubes. Quarter the king oyster mushrooms and tear the plantbased sausages into bite sized pieces. Dice the tomatoes
3. Heat up a stockpot to medium high heat. Add 2 tbsp of avocado oil followed by the plantbased sausage. Sauté for about 5-6mins until the sausage is nice and crispy. Set the sausage aside
4. Bring the stock to medium heat. Add 2 tbsp avocado oil followed by the onions and garlic. Sauté for about 5-6mins
5. Add the celery and carrots. Sauté for a few minutes. Then, make a well in the middle of the pot and add in the tomato paste along with the leaves from a few sprigs of thyme. Give the pot a good stir
6. Add in the tomatoes and stir. Add the red wine, turn the heat to medium high, and stir the pot. Allow the stew to bubble away for about 2mins
7. Add the russet potatoes, king oyster mushrooms, frozen peas, and the vegetable stock. Add the soy sauce and dark soy sauce. Give the pot a stir, then simmer on medium low for 25-30mins
8. Transfer about 3/4 cups of the stew into a blender. Blend on high for a few seconds, then transfer back to the pot. Give the pot a good stir
9. Plate and garnish with some of the crispy plantbased sausages and freshly chopped parsley

My only very minor suggestion is to add the frozen peas last, after everything has reduced. I find this keeps the peas from being mushy. Love the recipe!

@YEUNGMANCOOKING. A few questions, but first, I have watched countless videos and wow man, great content!! Off the wall my friend. 1. What would be recipes for breakfast? 2. Out of curiosity, what would your bloodwork look like with the sugar and sodium intake? I ask due to a meat eater but would ease into the next question, what does most of your protein look like from these recipes? And last would be calorie intake as I don’t see this in your extras. Thanks so much.

We use these recipes often. Due to Chronic Kidney Disease we have to eat a low sodium diet. Wife has found low sodium recipes on line for soy sauce, oyster sauce, and hoisin sauce. Worchester sauce is an excellent substitute for fish sauce. Using all of our homemade sauces makes Yeumgmancooking recipes very tasty and low sodium.@@scottpetrie8707

I've commented this before, but I'm not a vegan/vegetarian. I don't plan to ever be one. I do however think people on average eat too much meat, and your cooking has actively reduced how much I personally eat. At this point, the non-meat dishes in my repertoire outnumber the meat dishes.

Yes instead of eating a 16oz steak, try using it in a nice stir-fry with vege or tofu. Can easily split between 2 people now

I’m not a vegetarian but have never desired or digested meat well. Now I’m older and find that my energy level stays consistent eating vegetables while even small amounts of meat tend to sap my energy.

Who can afford a nice steak all the time these days anyhow! I use a small amount of meat in a soup, stir fry, or whatever, so I can feed three people for two days (6 portions) using what used to be 1 serving of meat for me.

This was delicious! I didn’t have dark soy sauce, so I just used a bit more regular soy sauce. I also used crimini mushrooms. Added the peas at the end. The chopping takes some time but it’s worth it. My husband kept saying guest quality! Thank you Wil.

The difference in prep for me is after adding the wine I actually turned the heat down to let the wine simmer slowly until it becomes syrupy and infuses the veggies with a mire intense flavor. 👍

Looks really nice Will, Thank you for the recipe. I like how you blended a bit of the soup to thicken it out, Ive never seen that, what a good idea, ppl mostly use a thickening agent, cornflour, plane flour etc but that blands the taste out n u gotta add more spices, I'll use your way now.

Beautiful, as usual, Wil. One thing - I noticed the green on your potatoes. While generally harmless in small quantities, it can have a bitter taste. Also this, from the USDA: When potato tubers turn green there is usually an increase in a glycoalkoloid compound called solanine. Consequently, it is important to store potatoes in the absence of light to prevent greening. Tubers with a high concentration of solanine will taste bitter, and can be harmful if eaten in large quantities. To be safe, it is best to not eat the green part of tubers." You do not need to discard green potatoes. Just peel the skins, shoots and any green color; that is where the solanines concentrate.

OMG! I just finished making this stew! I can't explain the taste. Never imagined there were these flavor profiles! I had to sub not by choice. We r expecting another snow storm one after another & thought I had all the ingredients. Use zucchini instead of celery, used baby bella mushrooms. Couldn't find dark soy sauce used coconut amino. Also used green beans instead of peas. I want to try the original recipe next time!

I made this tonight. First made my own Veg stock (search for Great British Chefs for a good recipe) before doing a double quantity of the above. As with all Will Yeung recipes this is absolutely spot on. It retains crunch and flavour despite being rich and warming. Just amazing. It has made enough for 8 portions. Only comment is that I used 250ml to 1 cup for the stock and that is too much. You may want to use about 750ml to a litre if doing the same. This recipe doesn't appear in any of the 3 current recipe books unless I have missed it. (BTW - Highly recommend the signed books - the print quality is just lovely) I assume another book may be on the way (?) .

A gourmet stew! Thank you for this fabulous recipe and professional presentation. I really enjoyed hearing the beautiful strains of cello in the music in the beginning. It moved my heart and reminded me that the kitchen is the heart of the home, from where nourishment comes for the family.

I made a huge pot, it's absolutely delicious, comforting and so healthy! Brilliant recipe, thank you. I skipped the wine and the result was fantastic, just in case anyone is wondering if the alcohol is necessary. I will experiment with replacing peas with beans for versatility, oh and also I used shitake mushrooms which fit in perfectly.

Looks delicious! I saute everything in a tiny bit of water without the added oil (doctor's orders) and it still is amazing. What a great idea to blend a few cups of the soup and add it back to create that creaminess and the "warm hug in a bowl."

You boil some potatoes . Once boiled you set aside a few pieces of potato ( or a few baby potatoes if that’s what you’re using ). You take a pan add oil. Once oil is hot you add mustard seeds and a couple of curry leaves . Then you quickly add the boiled potatoes . Stir Then you add ground coriander and cumin mix , turmeric, chilli powder and salt to taste . Stir . The boiled potatoes you set aside you mash up and add a dollop of ketchup. This thickens the sauce . You put that mixture in the pan with the rest of the potatoes . Stir . Then you add some hot boiled water to the pan . And put on low heat with the lid 3/4 on. .Once the sauce is little bit thick but not too much , it’s done ! You garnish with fresh coriander .

Hi! I am an older person and a newbie in making delicious soups and Stews that are vegan and gluten free. So now, this one and others, some questions: 1. May I use Olive Oil instead of Avocado oil? 2. Is it OK not to use blenders... those will complicate my life. I live in a studio apt. and my resources and space are limited. 3. What of the ingredients that you have added has gluten? and if os, may I eliminate them? I am excited about the vegan Gluten Free recipes that you offer. I need heart soup of stews for the winter and I prepare for 5 days as I am a senior and also live in a small space.... any help and guidance from you would be appreciated. Thank you!

Hi there, I'm not Yeung but I can help answer this a bit! I made it last night for my grandma. Olive oil should be fine, as long as the heat isn't up crazy high... If you're used to cooking with it, you should be fine. Without blending a bit of the stew, it will taste good, it will just be a bit thinner and broth-like rather than thick. (For limited space, you may want to consider a stick blender! They're much smaller and easier to store.) For a gluten free stew, omit the soy sauce. You can use tamari or gluten free soy sauce. I don't think it would be too missed without it. It just adds a bit of umami. Also, most veggie sausages are made with gluten protein. Try and find gluten free veggie sausages. Or, maybe you could use a smoked tofu instead? (Smoked tofu is yummy!) Baked, crispy chickpeas might be a tasty topping, too!

Beyond Sausage is quite good. It's made with pea based protein & some yummy seasonings. When I use one, I usually consider it as 2 servings. I prefer the "hot & spicy Italian". It isn't hot at all; it simply has a better flavor profile than the plain

Thank you, chef. I made this today and it turned out extraordinary. I was a little worried about the lack of seasonings but I knew the soy sauce had plenty of salt to them so I trusted the recipe and I must admit I ate two bowls back to back and can go back for a third no problem. Delicious and easy and healthy, I’m very very pleased 🙏🏼

Celery over looked in many recipes adds a unique flavour. TIP Celery wilted ? Bok Choy Rhubarb. Cut the bottom off stand in water hey presto fully restored in short order hydrated and firm again.

I only know that you shouldn’t boil coconut milk too vigorously, as it can otherwise curdle or separate into fat and water. Ideally, you should heat the coconut milk slowly over medium heat until it is well mixed and reaches the desired temperature. Despite this, I followed the recipe exactly and the sauce didn’t turn out well. It’s a pity.

Tried this the other day. Simple and tasty however I found it a little bland so added some Worcester source and salt to taste. The veggie sausages added a nice relief and as a predominantly non vegetarian person it was nice to create a totally veggie dish I could freeze and enjoy anytime. Overall especially for this time of year it’s a nice dish to warm you up. Thanks :)

One thing that will help thicken the stew- this is a great way to use up vegetables left over at the end of.the week, and if you have some leftover mashed potatoes, stir them in.
