You'll have to visit try the Real thing. Each store / Pizza shop uses a different meat & Spice recipe . Oh and ask to see a sample of Sauce first. Or ask if they use the Carnation milk . Very key .

In 2006, my husband drove to Nova Scotia for a 2 week road trip from NJ. I had two donair. I had never heard of them before but I fell in love with them. So good. The meat was on a spit, like the gyro meat here in NJ and NYC. It was a huge meatloaf. I have read a few recipes for them and it was always calls for condensed milk, which already has the sugar in it. I am going to try your version, Matty. Can’t wait

Made this on the weekend and it was SO GOOD. It did not last long. I halved the recipe and used only ground beef. For the sauce I used a can of condensed milk, a tbsp of garlic powder and about 1/4 cup of vinegar. 10/10 will make again. This time I think I'll make a triple batch lol NOTE: if you don't like spicy, tone the cayenne way down :) Thanks, Matty!

The Donair is a staple, drunk food, or whatever food from pizza joints here in Hali, also Garlic fingers, pizza dough rolled out with garlic butter as a base, mozza baked in a pizza oven cut into finger like pieces, then dipped in said Donair sauce! They are also amazing!

@@gibbyg2001 PRO TIP: the other thing that makes this even MORE FIRE is if you just LIGHTLY grill/heat up the sliced Donair meat in a skillet or on a flat top grill before ya add it to your steamed pita with the sauce, tomatoes and diced red onions just helps crisp up the meat and OH BABY!

The Donair was always the pinnacle of the evening in Halifax! After being cordially, and sometimes physically, invited to leave the Liquor Dome, we'd head up to the Palace for some live music, then around 4am head to Pizza Corner for Donairs. King of Donair all the way!

heavily working meat until it is 'emulsified' is done in many other dishes, commonly in sausages, especially hot dogs and bologna, but also in things like fillings for Asian dumplings, meat/fish balls etc. Note also there is no bread or eggs in it like would be in Italian style meatballs or meatloaf, which makes them more loose.

You can find donairs throughout atlantic Canada. Donair availability pretty much stops at the Québec border (same for garlic fingers).
