I love your videos. I love your attention to detail and the precison of the recipes. I am at day 2. meat filling and jelly is done, cold water dough is resting in fridge. I want to know what is the best way to freeze XLB

Awesome~ You must be a detail oriented person too! Believe or not, I was never be able to keep up the speed to make XLB than eating....so I have never freeze them. Basically you can either freeze them before or after steam them. Maybe you can freeze 1/2 of them as soon as you finish wrapping. And the other half to steam 80% of the time to test? If you do, kindly pls leave a note when you eat them later. :)

However, I have to say that probably not a great choice to freeze the XLB since they are so delicate. However, if you ever want to try to make the Pan fried soup dumplings I just uploaded yesterday, you can freeze them.

Hungry Cook 心怡厨房 i made a large batch since it was labor intensive. But wasnt able to make my xlb as thin as pretty as yours are. I’ll try freezing some to test. Will let you know if it works

It works I freeze them before streaming them. I wanted to include a photo. But couldn’t figure out how.

Just discovered your videos, I truly enjoyed watching them and will definitely try making them all. You spoke clear and eloquently, and made it quite pleasant to watch and learn. It helped when you included the scientific explanations. I shared them with my mom and she also learned quite a lot from you. thank you! Due to my limited Chinese, i missed the part as to why you combined the water dough and the yeast dough towards the end and not just mix them together in the beginning. Do you store the yeast dough in the fridge as a starter? I make sourdough bread and you mentioned using sourdough starter rather than yeast. Can you tell me how to calculate the amount of yeast vs sourdough starter?

Hello ES, Glad you and your mom have enjoyed the video and hope you will make it successfully. It's great that you can make sourdough bread which is healthy and tasty...but for XLB it's best if you can use the yeast to start with for a controlled quality. The cold water dough can make it ahead of time ... a few hours or 1-2 days ahead. And prepare the yeast dough on the day when you make the XLB. A good cold water dough (with enough kneading and rest) will make the wrapper easy to wrap and stay in shape after steam....because cold water dough will give plenty of elastic and strength abilities. Yeast dough will create some air pockets in the wrapper which will make the XLB easy to bite and not chewy. You will need to combine them at the last min because yeast is a living thing, they will take over the whole cold water dough as their own if you give it enough time. Then, you will be ending up with a big yeast dough like a Bao. Bao will have too much air pockets in it and all the soup will be absorbed into it....and of course, the texture will be very different too. One more thing, in order to create enough soup in the XLB, it's best to use enough soup jelly...about 1:1 to the pork meat. Have fun!

Good question, no, actually you don't need to. But you do need to give some time for the cold water dough to rest ... for 1-2 hours or longer.
